Plain formed potato balls
Prepared potato is formed into round portions and frozen. Potato percentage, starch or binder, salt, moisture, piece weight and heat treatment belong in the specification.
Pre-fried or coated potato balls

Whole baby potatoes

Commercial Size and Processing Matrix

Piece weight is the most useful control for portion cost. Diameter can be added after sample measurement, but it should not replace weight because formulation density and forming pressure can change the relationship between grams and millimetres.

Raw Material, Forming and Process Control

We begin with potatoes suitable for the target texture. Raw material review covers variety or functional type, maturity, sprouting, green area, rot, black spot, mechanical damage, soil and foreign material. Washing and peeling reduce surface contamination and remove defective tissue before the potato is cooked or otherwise prepared for forming.

The prepared potato base is mixed to the approved recipe. Mixing order, water addition, starch or binder, seasoning, temperature and hold time affect stickiness and forming stability. Forming equipment is set against the declared piece-weight range. We compare average weight and distribution rather than accepting one visually round sample.

Blanching, steaming, roasting and pre-frying are different processes. The order states which treatment applies, the expected interior texture and whether the customer will finish-cook by frying, baking, air-frying, steaming or incorporation into a ready meal. We do not apply French-fry process language to a formed potato ball.

IQF Freezing and Frozen Defect Control

After the required thermal step and cooling, the product enters freezing under a controlled loading rate. Individual quick freezing is intended to bring pieces through the freezing zone efficiently and maintain separation. The freezing tunnel image is general equipment evidence; the production record and product inspection identify the actual batch.

Final frozen inspection covers free flow, excessive frost, clumps, cracks, broken pieces, flat or collapsed balls, dark particles, colour deviation and foreign material. For pre-fried product, we also inspect surface colour and excessive oiliness. For coated product, coating loss, exposed filling and fines require separate limits.

A frozen ball should withstand normal packing and distribution without turning into fines, but the application trial remains important. We evaluate the agreed finish method for surface integrity, interior texture, oil uptake or moisture release, colour and holding stability. Results from different ovens, fryers, load sizes and time/temperature settings are not directly comparable.

Microbiological and Chemical Specification

Frozen potato balls are normally non-ready-to-eat unless the signed specification and validated process state otherwise. The following table is a practical export starting specification. Customer, destination-market and intended-use requirements can be tighter. Limits are acceptance criteria, not generic actual results.

The micro program must match whether the product is NRTE, fully cooked, pre-fried or intended for a ready-to-eat application. Freezing does not sterilize the product. The customer's downstream kill step, cross-contamination controls and label instructions remain part of the safety assessment.

Recipe, Allergens and Certification Scope

The formula determines whether the product can be described as 100% potato, plain formed potato, coated potato snack, seasoned potato ball or filled product. We provide the complete ingredient sequence for label preparation. Water, starches, flour, milk ingredients, cheese, egg, soy, seasonings, raising agents and processing aids are declared when used.

Standard plain product should not be assumed allergen-free. Wheat may appear in a binder or coating; milk can appear in mash or filling; soy may occur in seasoning or shared processing. We review recipe allergens and the manufacturing-site allergen statement before the customer approves artwork. Gluten-free, vegan, Halal, Kosher, organic or non-GMO wording is used only when the formula, site controls and supporting documents cover that claim.

Certificate availability depends on the selected factory and product scope. HACCP, BRCGS, IFS, FSSC 22000, ISO 22000, Halal and Kosher serve different functions. FDA Food Facility Registration is not an FDA product certificate. We provide the relevant copy and scope for the buyer's supplier-approval file.

Batch COA and Release File

The product specification states limits; the COA states the Actual Result measured for the identified production batch. We do not copy a maximum limit into the result column or reuse one lot's test result for another shipment. Product name, formula or SKU, batch number, production date, packing date, sample identity and test method connect the report to the goods.

We match the product to the buyer's actual equipment and service condition. A foodservice side dish needs consistent portions and holding stability. A retail snack needs controlled colour, surface integrity and bag appearance. A ready meal must tolerate the customer's assembly, freezing and reheating cycle without collapsing or releasing excessive moisture.

Usable cost includes more than carton price. Compare pieces per kilogram, within-range percentage, broken material, coating loss, oil uptake, preparation yield, labour and rejected portions. A tighter visual grade can be worthwhile for retail but unnecessary when the product is crushed or incorporated into a formulation.

Frozen Storage and Cold-Chain Control

We store frozen potato balls at −18°C or below after packing. Warehouse records connect pallet or carton identity with lot and storage location. Carton condition, bag seal, frozen free flow and temperature evidence are reviewed before release.

Repeated warming can increase frost, clumps, cracking, moisture migration and microbiological concern after thawing. A brief rise in container air temperature during door opening does not alone establish product damage; logger history, product core condition, frost pattern and the distribution of affected cartons provide stronger evidence.

Mixed-container loading can be discussed with compatible frozen products when temperature, factory, packing and schedule permit. Each SKU requires clear lot separation, carton marks and document matching.

Pre-shipment and Receiving Inspection

Before loading, we review product name, formula/SKU, lot, quantity, net weight, bag seal, carton condition, labels, reefer cleanliness, set point and seal number. Loading quantity is finalized from carton dimensions, pallet plan and permitted payload rather than a generic container claim.

At receipt, record container and seal identity, temperature evidence, pallet/carton condition and lot codes before opening samples. Inspect the frozen product first for free flow, frost, cracks, broken pieces and colour. Use the contracted finish method for texture and application review.

For a claim, preserve unopened cartons from the same lot, photographs, sample weights, defect separation and laboratory chain of custody. "Too many broken balls" becomes judgeable when the inspected net sample, separated defect weight, percentage, lot and images are recorded. We compare the result with the signed definition and sampling plan.

Sample Approval and Repeat-Order Lock

A sample is identified with product identity, formula version, process, piece weight, lot, production date and packing. We inspect it frozen before conducting the customer's finish test. The approval record covers appearance, average piece weight, weight distribution, broken rate, clumps, flavour, texture and application performance.

For frying, record oil type, oil temperature before loading, product load, time, recovery and final colour. For oven or air-fryer trials, record equipment, fan setting, tray load, time and temperature. For ready meals, use the customer's complete assembly, frozen storage and reheating cycle. This turns subjective comments such as "too soft" into a repeatable comparison.

After approval, the order specification locks ingredient declaration, allergen status, piece weight, processing method, defects, analytical limits, micro plan, packing, label and documents. Agricultural and process variation may change an Actual Result within the signed range, but a different formula, filling, coating, factory or test method is not treated as the same approved product without review.

For a comparable quotation, request the same potato percentage, nominal piece weight, heat treatment, coating status, fat limit, packing format and inspection basis from every supplier. A carton of smaller pieces contains more units per kilogram, while a pre-fried or coated product carries a different ingredient and yield basis from a plain ball. Freight comparisons should use the same net carton weight, pallet plan, container type and destination term. We state these commercial assumptions on the offer so a lower price is not created by reducing piece weight, changing formulation, omitting required tests or quoting another potato format.
