What We Supply as Frozen Grated Ginger
Frozen grated ginger is peeled ginger reduced to a moist, fibrous mass and frozen rapidly in a commercial unit that suits dosing. It is not automatically the same product as minced ginger, ginger purée or ginger paste. We use the name "grated" only when the order states how fineness is measured. A screen aperture and minimum pass rate give the receiving team a repeatable test, while an approved reference sample defines the acceptable visual texture, natural fibre and moisture release.
Our default ingredient declaration is 100% peeled ginger, with no intentionally added water, salt, starch, sugar, acidulant, color or preservative. This clean-label program is suitable when the buyer wants ginger aroma and pungency without reformulating for extra ingredients. A formulated ginger preparation can also be developed as a separate item, but its formula, legal name, ingredient declaration and processing behavior are handled independently from the 100% ginger specification.

Because fine grated material naturally binds together, we do not describe a compact 1 kg or 5 kg block as free-flowing IQF. The product may be quick frozen in a block, tray, sachet or small portion. Coarser material can be supplied in a looser format where the selected line, particle structure and pack allow it. The quotation names both the texture and the freezing format so purchasing, production and receiving teams are working from the same definition.
Texture Programs
Screen and Particle Options with Numeric Release Rules
"Fine," "coarse" and "smooth" mean different things to different plants. We therefore offer three screen-based grated programs. The pass percentage is assessed using the stated aperture and the written sampling method. It does not mean that every fibre is shorter than the aperture, because ginger fibres can bend and orient during screening. For visible-particulate products, the minced alternatives use nominal particle dimensions instead.

Sampling rule: a production-lot composite is taken from the beginning, middle and end of the packing run. The retained sample is kept frozen, thawed under the written method and evaluated for pass rate, color, aroma, fibre, separation and gross weight. The signed specification states the sieve condition, sample mass, thaw time and calculation method so repeat testing is comparable.

Grade A and Premium A+ Release Programs
Premium A+ is a defined order grade rather than a general quality slogan. Both grades use sound ginger and the same food-safety program; the difference is the tighter visual preparation and defect allowance. Severe defects, dangerous foreign material and abnormal odor are not accepted in either grade.

EVM means harmless extraneous vegetable matter from the ginger plant, such as excessive fibrous or peel material. FEVM means foreign extraneous vegetable matter from another plant. Neither category includes metal, glass, hard plastic, stones, insects or other foreign material; these are controlled separately and are not accepted.

Raw Material
Ginger Selection, Peeling and Pungency Control
We select mature ginger roots for characteristic aroma, pungency and fibrous structure. Receiving inspection covers supplier lot, origin, appearance, decay, sprouting, soil contamination, abnormal odor and the residue-testing plan. The usable roots are washed to remove soil, peeled and trimmed before size reduction. Decayed, moldy, badly bruised and heavily discolored pieces are removed.
Natural ginger varies with cultivar, maturity, growing area and harvest season. A color photograph alone cannot control flavor strength. For sensory-led projects, we work to an approved reference sample and record raw-material season. For a numeric pungency program, the order can include total gingerols ≥0.10% w/w on the frozen product by HPLC. The batch COA then reports the measured result, not the target copied into an "Actual Result" field.
Ginger fibre is natural, but long woody strands can disrupt pumps, nozzles and fine fillings. The screen program, EVM allowance and reference sample establish the acceptable fibre level. Applications using narrow dosing equipment should select the 0.5 or 1.0 mm program and provide the smallest opening in the customer's line. Applications seeking visible identity generally perform better with coarse grated or a defined minced cut.
Process Control
From Peeled Root to Frozen Grated Portion
- Receiving: we identify the raw-material lot and inspect soundness, odor, soil, decay and visible foreign matter.
- Washing and peeling: soil is removed, roots are peeled, and scars, spoiled tissue and unacceptable discoloration are trimmed.
- Controlled washing: prepared roots are washed under the site sanitation and water-control program, then drained to limit unnecessary surface water.
- Grating and screening: prepared ginger is reduced using the selected equipment and assessed against the designated aperture/pass-rate program.
- Portioning or filling: the grated mass is packed into the selected 20 g, 50 g, 500 g, 1 kg, 5 kg or 10 kg configuration.
- Freezing: product is frozen promptly to protect handling quality and bring the product core into the frozen state.
- Foreign-material control: screening, visual controls and validated metal detection are applied according to pack format.
- Release and storage: lot identity, net weight, packaging, temperature and required test results are reviewed before the released lot enters storage at ≤−18°C.
Peeled ginger pieces on a perforated tray represent a preparation stage before further size reduction. This is not presented as a view of a dedicated grated-ginger production line.
Sensory Performance, Separation and Application Fit
Grated ginger is selected for fast distribution through a recipe, but the best format depends on where the ingredient enters the process. Fine material provides fast aroma release and fewer noticeable particles. Coarse material retains more visible fibre and gives a less homogeneous appearance. As a natural comminuted root, thawed grated ginger can release liquid; this is not the same as added water. The moisture range, thaw method, reference sample and any separation measurement should match the customer's dosing process.
Use fine 1.0 mm grated ginger for broad dispersion. Select extra-fine when a narrow nozzle or smooth emulsion cannot accept visible fibre. State whether the product is dosed frozen or after controlled thawing.
Fine or coarse grated programs distribute pungency through meat or vegetable filling. The reference sample should define whether natural strands are acceptable in the finished bite.
Coarse grated or 2–3 mm minced product provides a more visible ingredient. Small portions simplify recipe dosing and reduce the need to thaw an entire bulk block.
Extra-fine material limits large fibre but remains a natural grated ingredient rather than a clarified juice. Filtration, extraction yield and sweetness are controlled by the customer's process.
20 g or 50 g portions support repeat dosing; 500 g and 1 kg packs suit higher-throughput kitchens. Product remains ready-to-cook and must be handled under food-service hygiene controls.
Retail or foodservice packs can carry approved artwork, lot coding, storage instructions, origin and legal statements. Unit configuration and case strength are fixed before printed-pack production.
Microbiological Release Specification
Frozen grated ginger is a raw agricultural ingredient that has been washed, prepared and frozen; freezing is not sterilization. Our standard international industrial program below is designed for further cooking or controlled manufacturing. A market, customer or end-use program can apply a different sampling unit or tighter limit when written into the product code.

For a United States program requiring a larger Salmonella analytical unit, the order can state "not detected in 375 g." The report then identifies the tested sample mass. Pathogen sample size, composite design and method are never left to interpretation after production.
Chemical, Residue and Foreign-Material Controls
The residue program is matched to the destination market. For an EU program, every analyte must be at or below its applicable MRL under Regulation (EC) No 396/2005; where the default MRL applies, the working limit is 0.01 mg/kg. Our declaration refers to compliance with applicable MRLs and the stated analytical scope.
The EU-oriented raw-material targets are lead ≤0.80 mg/kg wet weight for fresh ginger and cadmium ≤0.10 mg/kg wet weight for root and tuber vegetables. Application to the frozen grated product follows the processing concentration or dilution rules in Regulation (EU) 2023/915.
The standard proposal is ferrous 2.0 mm, non-ferrous 2.5 mm and stainless steel 3.0 mm. The final sensitivity is validated with the actual product temperature, aperture, bag material and pack size; the validated value is recorded in the production specification.
The 100% ginger formula contains no intentionally added EU-listed major allergen and no intentionally added genetically modified ingredient. We provide the selected plant's allergen cross-contact statement and the declaration format required for the order.
Routine and risk-based testing are separate. The routine COA lists the tests assigned to every lot. A broader pesticide screen, heavy metals, gingerols, authenticity work or other customer panel can be ordered at the agreed frequency. The sampling frequency, laboratory responsibility and acceptance rule appear in the quality agreement so a certificate is never mistaken for a test that was not performed.
Batch Evidence
COA Fields That Separate Limits from Measured Results
The COA identifies the product, production lot, production date, best-before date and the tests assigned to that lot. A specification limit is the acceptance rule. An Actual Result is the measured result for the named production batch. We do not populate the Actual Result column by repeating "≤500,000," "complies" or another target when a numeric test generated a value.

This is a general certificate display, not a grated ginger batch certificate. Current copies are supplied for the selected plant with site name, scope and validity period.
Documents and Traceability
A Document Pack Matched to the Plant, Product and Shipment
We provide the document set assigned to the selected manufacturing site and destination. Certificate names alone are insufficient: the buyer receives the site name, certified activity, product-category scope, certificate number and validity period. A factory certificate is not used as a batch COA, and a batch COA is not used as evidence of a management-system certification.
The standard file can include product specification, ingredient statement, allergen statement, GMO statement, process flow, nutrition data where required, packaging specification, current site certificates, batch COA, packing list, commercial invoice, bill of lading and origin or phytosanitary documents when applicable. Market-specific health certificates and test reports are listed in the quotation.
Traceability connects the finished-lot code to production date, packing line, packaging batch, key process records and raw ginger lot. We retain the agreed lot sample under frozen conditions. In an investigation, the buyer should provide the affected lot code, carton and bag photos, quantity, receiving temperature, storage history and clear defect evidence. This lets us isolate the scope rather than treating every shipment as one undifferentiated batch.

Packing Formats for Recipe Dosing, Foodservice and Wholesale
The best pack is determined by dose size, thaw practice, daily throughput and waste control. Fine grated ginger frozen in small portions supports repeated dosing. Larger blocks reduce packaging per kilogram but require a planned thaw and use period. Every option uses food-contact inner material and an export carton sized for frozen distribution.

Private-label work can include customer artwork, barcode, nutrition panel, preparation statement, multi-language text, date-code format and shipping marks. Printed materials move into production after artwork approval and the applicable film/carton minimum. For trials, neutral inner packs and export cartons may reduce setup time.
Cold Chain
Frozen Storage Before Dispatch
Released product is held at or below −18°C. Warehouse records link pallet or carton identity to the production lot and location. Before dispatch, we check product status, packaging condition, lot marks and loading instruction. Cold storage protects the frozen condition; it does not replace raw-material hygiene, process control or microbiological release.
The receiver should prepare frozen storage before arrival and move cartons promptly from the reefer. Temperature excursions, partially thawed blocks and repeated freeze–thaw cycles can increase clumping, separation and color change. Claims should include logger data or receiving temperatures so the product and transport records can be assessed together.

Commercial Delivery
MOQ, Loading, Lead Time and Trade Terms
- MOQ: one 20-foot full-container load for a dedicated program; mixed frozen-food containers are available when product compatibility and production timing align.
- 40-foot reefer guide: approximately 24 metric tons for suitable loose-loaded small packs or approximately 22 metric tons palletized. Final payload follows carton dimensions, pallet plan and legal weight limits.
- Lead time: normally 15–21 days after commercial order, specification and packaging readiness; printed private-label material may add artwork and printing time.
- Loading ports: Xiamen, Dalian or Qingdao according to production site and shipment plan.
- Trade terms: FOB, CFR or CIF.
- Supply window: all-year shipment supported by crop procurement and frozen-stock planning.
A useful RFQ states destination port, annual volume, first-shipment timing, grated screen, grade, pack, target market, pathogen sample plan, chemical-test panel, labeling language, pallet requirement and Incoterm. With these fields, we can quote the product the receiving plant actually intends to approve.
Specification Selection
How We Turn an Application into an Orderable Ginger Program
A purchasing name is only the starting point. We translate the finished-food process into a product code that the factory can make, the laboratory can test and the receiving team can release. The most useful starting detail is the point at which ginger enters the recipe. A frozen portion added directly to a heated kettle behaves differently from a 5 kg block thawed for a cold marinade, even when both contain the same ginger.

For a new application, a small product sample is evaluated in the customer's actual recipe rather than judged only after thawing in a cup. The trial records ginger dose, addition point, mixing time, heating profile, hold time and finished-product result. If the product passes, those decisions move into the approved specification and purchasing code. If a different screen or dose unit performs better, the revision is made before commercial printed packing or a full-container production plan is released.
Receiving and Use
Practical Checks from Container Arrival to Recipe Dosing
Receiving control starts before a carton is opened. The team records container and seal numbers, reefer set point, available temperature data, carton condition, pallet condition where applicable and the lot codes on representative cases. The quantity is checked against the packing list. Damaged, wet, crushed or visibly thawed cartons are isolated and photographed before unloading evidence is lost.
A representative receiving sample is taken under the customer's approved sampling plan. Net weight, package seal, coding, frozen condition and sensory appearance are checked first. Screen testing is conducted after the same controlled thaw procedure used in the specification. Using warm water for one test and overnight refrigeration for another can produce different separation and texture, so the time, temperature and sample preparation remain consistent. Microbiological or chemical samples are handled aseptically and sent under the conditions required by the laboratory method.
For production use, the smallest practical pack reduces partial thawing. A 20 g or 50 g portion can go directly into many heated recipes. A 1 kg pack supports foodservice or short production runs. A 5 kg or 10 kg block suits high-throughput manufacturing only when the plant can thaw it under refrigeration, protect it from cross-contamination and use it within its validated internal time limit. Product that has thawed should not be returned to frozen inventory.
Natural color and pungency can vary slightly by crop lot even when every result remains inside the written standard. First-in, first-out lot use and a retained reference reduce sudden sensory shifts in a continuous production campaign. If a lot is questioned, the receiving team should preserve unopened units and send the exact lot code, pack photographs, sample handling record, temperature history and recipe observation. We compare those records with the retained sample, production checks and dispatch documents to determine whether the issue concerns one unit, one lot, transport or the application process.

Frozen Grated Ginger FAQ
1. What is the difference between frozen grated ginger and frozen minced ginger?
Grated ginger is a moist fibrous mass released by a screen aperture and pass rate. Minced ginger contains recognizable particles stated as a nominal 1, 2 or 3 mm cut. Grated product disperses faster; minced product provides more visible pieces.
2. Which grated sizes do you supply?
The standard programs are extra-fine with ≥70% passing 0.5 mm, fine with ≥84% passing 1.0 mm, and coarse with ≥86% passing 2.0 mm. The test method and reference sample are attached to the selected product code.
3. Is the default product 100% ginger?
Yes. Our default formula is 100% peeled ginger without intentionally added water, salt, starch, sugar, color, acidulant or preservative. Any formulated preparation is quoted under a separate formula and ingredient declaration.
4. Is frozen grated ginger IQF or block frozen?
Fine grated ginger naturally binds and is normally frozen as a portion, sachet or block. We do not call a compact block free-flowing IQF. Coarser formats can be supplied looser where product structure, equipment and pack permit.
5. How is pungency controlled?
The standard program uses characteristic sensory aroma and a reference sample. Numeric programs can specify total gingerols ≥0.10% w/w by HPLC. The issued COA states the production lot's measured value when this test is ordered.
6. What color should the product be?
The normal range is creamy white to light yellow, with natural seasonal variation and occasional pale pink blush. Fermented odor, mold, decay and abnormal dark oxidation are not accepted. Grade A and Premium A+ have separate discoloration limits.
7. Does thawed grated ginger release water?
Some liquid release is natural in a comminuted frozen root and does not prove that water was added. The standard product contains no added glaze and uses a 77–90% moisture band. A written thaw method makes separation comparisons meaningful.
8. What microbiological limits do you offer?
The standard program includes TPC ≤500,000 CFU/g, Enterobacteriaceae ≤1,000, coliforms ≤500, E. coli <10, yeasts and moulds ≤1,000, Salmonella not detected in 25 g and L. monocytogenes not detected in 25 g.
9. Is frozen grated ginger ready to eat?
No. It is supplied as a ready-to-cook ingredient for further manufacture or foodservice preparation. Freezing does not sterilize ginger. The receiving plant must apply the cooking step and hygiene controls appropriate to its finished product.
10. What appears on the batch COA?
The COA identifies product code, production lot and dates, then separates specification limits from Actual Results. Numeric tests show the measured lot value and pathogen tests state the tested sample size and detected/not-detected result.
11. Can you test pesticide residues and heavy metals?
Yes. We build the panel around the destination market and agreed frequency. EU orders use analyte-specific MRLs, with 0.01 mg/kg where the general default applies. Lead, cadmium and additional elements can be reported in mg/kg for the tested lot.
12. Which portion and bulk packs are available?
Options include 20 g and 50 g portions, 20×500 g, 10×1 kg, 4×5 kg and 1×10 kg bulk liners. Pack selection depends on recipe dose, thaw practice, private-label artwork and case-handling requirements.
13. What is the MOQ and 40-foot reefer loading quantity?
The standard MOQ is one 20-foot FCL for a dedicated item. A 40-foot reefer carries approximately 24 metric tons in a suitable non-palletized small-pack plan or approximately 22 metric tons palletized, subject to case dimensions and legal payload.
14. What are the shelf life and storage conditions?
Shelf life is 24 months from production when stored and transported continuously at or below −18°C. Do not refreeze after thawing. Receiving temperature and storage records should be retained with the lot documents.
15. What information produces an accurate quotation?
Send destination port, annual volume, first-shipment date, screen program, grade, pack, target market, microbiological plan, chemical panel, labeling language, pallet choice and Incoterm. We will price the specified configuration rather than a generic ginger item.
