Frozen Garbanzo Beans
Description
Technical Parameters
Frozen Garbanzo Beans and IQF Chickpeas for Bulk Food Supply
We supply frozen garbanzo beans, also known as IQF frozen chickpeas, for importers, foodservice distributors, hummus and dip manufacturers, salad processors, soup and curry producers, ready-meal factories, central kitchens and private-label frozen programs. Our principal product is the whole mature beige Kabuli chickpea, prepared to a declared hydration and cooking level, individually quick frozen, inspected and packed for commercial frozen distribution.
A dependable order needs more than the words "A grade." We define bean diameter, cooking route, center tenderness, whole-bean rate, split and broken beans, loose skins, hard centers, mushy beans, discoloration, thaw drip, surface frost, clumps, microbiological limits, pack and batch documents. Standard Firm-Cooked and Tender Fully Cooked routes are kept separate because they perform differently in salads, soups, hummus and further heat processing.

Garbanzo Beans and Chickpeas Are the Same Product
Garbanzo bean and chickpea are two commercial names for Cicer arietinum L. "Garbanzo beans" is common in North American retail and foodservice, while "chickpeas" is widely used in international ingredient, industrial and culinary markets. We align the signed specification, bag label, carton mark, invoice and shipping documents with the destination-market name.
Our standard frozen product is a mature beige Kabuli-type whole chickpea. It is distinct from green chickpeas harvested before full maturity, desi chickpeas with smaller darker seeds, peeled chickpeas, chickpea halves, puree and hummus. Those forms require separate identity, color, process and packing specifications.
Frozen garbanzo beans are hydrated and heat treated before IQF freezing. They are not dry beans placed directly into a freezer. The contract states whether the product is blanched/part-cooked for later processing or fully cooked to a defined tender endpoint.
Whole chickpeas moving across the grading line show product-specific conveying and size distribution before frozen packing.
Buyer Risks and Measurable Controls
| Buyer concern | Order risk | Our control | Release evidence |
|---|---|---|---|
| Wrong cooking level | Firm beans remain chalky in hummus; tender beans break during retort or long cooking. | We separate Firm-Cooked and Tender Fully Cooked routes and inspect the bean center. | Named process route, center test and approved sample |
| Uneven size | Small beans overcook while large beans remain firm. | We grade 9-13 mm, 10-15 mm or buyer-defined diameter and state conformity. | Actual size-conformity percentage on inspection record |
| Split beans and loose skins | Poor salad appearance, cloudy sauce and excess fragments. | We control hydration, heating, cooling and handling, then sort the frozen product. | Whole-bean, split/broken and loose-skin results |
| Mushy or hard centers | Texture fails in salads, hummus or later factory heating. | We inspect cut centers and compression response from beginning, middle and end samples. | Hard-center and mushy-bean percentages |
| Ice and clumping | Frozen dosing becomes inaccurate and cartons gain loose ice. | We drain surface water, IQF freeze, inspect separation and protect the cold chain. | Free-flowing, clump, frost and loose-ice checks |
| Unclear food-safety status | A cooked appearance is mistaken for validated ready-to-eat status. | We declare intended use and microbiological criteria; standard product remains ready to heat or further process. | Specification, COA and cooking statement |
The product-specific conveying and grading deck supports size distribution and whole-bean inspection.
Product Forms and Processing Routes
Standard Firm-Cooked IQF chickpeas are hydrated and heat treated until the center is cooked but remains firm. They suit soups, stews, curry, retort meals and factory formulas that receive another substantial heat step. Hard centers are limited to 2% for Grade A and 1% for Premium A+.
Tender Fully Cooked IQF chickpeas crush with moderate finger or fork pressure and contain no dry or chalky center. They suit hummus, dips, short-hold foodservice, prepared salads and recipes with limited additional cooking. Mushy beans remain limited to 3% for Grade A and 1% for Premium A+; the standard product is ready to heat or further process, not automatically ready to eat.
Peeled chickpeas can be quoted for smoother puree and hummus when peeling capability and volume allow. Loose skins are then measured differently from the standard skin-on product. Green chickpeas, desi chickpeas, halves, puree and seasoned products use separate specifications and are not substituted into a mature Kabuli whole-bean order.

Color, Size and Sample Approval
Diameter is measured across the widest body of the hydrated bean, excluding the small beak. Standard ranges are 9-13 mm and 10-15 mm. Grade A requires at least 90% inside the declared range; Premium A+ requires at least 95%. A broad approximately 10 mm commercial grade is sold only against an approved physical sample.
Natural color ranges from cream and beige to light yellow. A physical color reference or approved sample is more reliable than an isolated color adjective. Materially brown, grey, blackened, green, scorched or otherwise abnormal beans are limited to 2% for Grade A and 1% for Premium. Normal minor crop variation is not described as a defect.
For first orders, we recommend evaluating a frozen sample and the intended end-use trial. Record the bean diameter, whole rate, skins, center tenderness, split rate, color, thaw drip and behavior after the planned hold or second heat step. The approved result becomes the repeat-order reference.
The actual chickpea lot is shown beside a color reference to support repeatable cream-to-beige appearance review.
Raw Chickpea Receiving Standards
We receive dry mature chickpeas by identifiable supplier and lot. The incoming record includes origin, crop year, variety or commercial type, weight, moisture, size grade, infestation status and intended frozen production batch. Raw chickpeas must be sound, well screened and free from musty, sour, heated, weevilled or commercially objectionable odor.
For the dry raw material, moisture is limited to 14.0%. Grade A receiving limits total defects to 2.0%, total damaged beans to 2.0%, total foreign material to 0.5%, stones to 0.2%, contrasting classes to 0.5% and contrasting chickpeas to 1.0%. These dry-lot controls follow the structure of recognized chickpea grading and are separate from the frozen finished-product defect table.
Live insects, insect webbing, animal filth, glass and metal are absent. Stones and dense mineral material are removed before hydration through screening and density separation where applicable. Incoming dry quality affects hydration uniformity: old, heat-damaged or mixed-size beans can produce hard centers, split skins and uneven cooking even when the thermal process is unchanged.
Product-specific manual sorting removes discolored, broken, split and otherwise nonconforming beans.
Hydration, Cooking and IQF Process
Approved dry lot → screening and sorting → potable-water washing → controlled soaking/rehydration → drain and rinse → firm cooking or full cooking → rapid cooling → surface-water removal → IQF freezing → frozen sorting → metal detection → weighing and packing → -18°C cold storage → batch release.
Hydration is controlled by dry-bean age, initial moisture, diameter, water temperature and time. The endpoint is uniform water penetration without fermentation, abnormal odor or excessive skin separation. Process water is potable. Soaking water is drained; the beans are rinsed before thermal treatment.
Cooking time and temperature are validated for equipment, load and target texture rather than published as one universal minute value. We check beans from the beginning, middle and end of the process. Cooling limits carry-over cooking; effective draining reduces surface frost and frozen clumps. Typical IQF tunnel air operates around -30°C to -40°C, and the finished core reaches -18°C or below.
Texture Endpoint and Thaw-Drip Test
For the Firm-Cooked route, the bean is cooked through but retains moderate resistance and structural integrity. A cut center is moist and uniform, without a white dry or chalky core. For the Tender Fully Cooked route, the bean crushes with moderate pressure and is suitable for short further processing or blending, while the lot remains sufficiently intact for frozen handling.
Hard or chalky centers are measured on at least 100 beans from the composite sample. Grade A permits no more than 2%; Premium A+ no more than 1%. Mushy or collapsed beans are measured by weight after controlled thawing and are limited to 3% and 1% respectively. The approved sample defines the final sensory endpoint.
For thaw drip, a weighed frozen sample is thawed at 4°C for 12-18 hours, drained for two minutes on a defined screen and reweighed. Grade A target is no more than 5%; Premium A+ is no more than 3%. A different buyer method is written into the specification before results are compared.
The close view shows intact IQF chickpeas and visible surface frost; frost and loose ice are measured rather than described as invisible.
Whole chickpeas are shown passing through inspection equipment before final frozen handling.
Foreign Material and Metal Detection
Stone, glass, metal, hard or soft plastic, wood, paper, hair, insects, visible soil and plant material other than chickpea are absent from released product. Screening and density separation address dry-lot stones; washing, manual sorting and equipment inspection address visible material; frozen sorting removes defective beans and loose skins.
Our starting metal-detector challenge targets are Fe 1.5 mm, non-Fe 2.0 mm and stainless steel 2.5 mm, subject to the confirmed aperture, pack and product effect. Checks occur at production start, at least every two hours, after stoppage or changeover and at production end.
If a challenge fails, the line stops and product produced since the previous successful check is isolated. It is re-screened only after the cause is corrected and detector performance passes. Metal detection is not presented as a control for stone, wood or plastic.

These are contract release limits, not assumed results. Each batch COA states the actual laboratory result. Standard supply is ready to heat or further process. A validated ready-to-eat route requires a separate thermal process, post-process hygiene design, environmental monitoring and sampling plan.
Chemical, Residue and Allergen Controls
Pesticide-residue testing is selected for the destination market and contracted crop program. Available panels can cover 200+, 300+ or 500+ active substances by LC-MS/MS and GC-MS/MS. The report lists the analyte, actual result, unit, reporting limit, applicable destination-market maximum residue level and compliance decision.
Our commercial heavy-metal targets for the finished product are lead ≤0.20 mg/kg, cadmium ≤0.10 mg/kg, total arsenic ≤0.20 mg/kg and mercury ≤0.01 mg/kg, provided the applicable destination requirement is not stricter. These are contract maxima, not batch results. ICP-MS or a validated equivalent method is used and the COA or test report shows the actual value.
Optional risk-based tests include aflatoxins, ochratoxin A and other mycotoxins where origin, crop history, destination rules or buyer policy require them. Standard product contains only chickpeas and no intentionally added gluten-containing cereal, milk, egg, soy, peanut, tree nut, sesame, mustard, celery, sulphite or other formulated allergen. The allergen statement covers the applicable manufacturing site and cross-contact assessment rather than the ingredient alone.

Frozen Storage and Cold-Chain Control
Finished cartons are stored at -18°C or below. Warehouse records connect the batch, quantity, storage position and movement. We inspect carton condition, product temperature, marks and lot allocation before loading.
The reefer is reviewed for cleanliness, odor, structural condition and pre-cooling. The normal set point is -18°C. Loading follows the approved loose-load or pallet plan without blocking required airflow. Container and seal numbers are recorded with loading photographs.
Repeated thawing and refreezing cause clumping, loose skins, greater drip and texture damage. The frozen chain should remain unbroken through ocean transport, import storage and distribution. Data logger service can be included when contracted.
Shipment Documents and Traceability
The order file can include the signed product specification, batch COA, microbiological report, pesticide-residue report, heavy-metal report, mycotoxin report when required, ingredient declaration, allergen statement, non-GMO statement, non-irradiation statement, shelf-life statement, packing list, commercial invoice, certificate of origin, health certificate, bill of lading, container loading photographs and seal record.
Facility certificates such as BRCGS, HACCP, ISO 22000, Halal and Kosher are supplied when their current site and product scope applies. Organic chickpeas are offered only through a valid chain covering source, processor, product, certificate period and transaction documents. FDA facility registration is a registration record, not a product certification.
Traceability links the dry chickpea supplier and lot to hydration/cooking records, line and shift, frozen batch, packing material, metal-detector checks, cold-store position, container and shipment. Retention samples and records support repeat-order comparison and complaint investigation.
Review our traceability system and frozen-food quality controls.

07 / Ingredients, Additives & Allergens
| Parameter | Specification / reference | Verification & order basis |
|---|---|---|
| Ingredient and origin | 100% chickpeas; China; Fujian supply route or other declared approved origin by lotPublished reference | Verify approved formula, supplier declarations and line-specific allergen assessment. |
| Added ingredients | Standard route: chickpeas only; salt 0%; preservatives 0%; artificial color/flavor 0%; added glaze 0%. Salted or formulated routes require a separate ingredient statement.Published reference | Verify approved formula, supplier declarations and line-specific allergen assessment. |
| Added glaze / coating declaration | Declare any intentionally added water glaze, syrup, oil or coating and the measurement basis; loose ice is assessed separately. | Verify formula/addition records; agree a deglazing or coating test and net-content basis where applicable. |
| Ingredient statement | List every ingredient and its declared role for the selected SKU; verify any added sugar, oil, coating, seasoning or glazing medium. | Approved formula and supplier declarations. |
| Additive use | Declare any colour-protection agent, acidulant or other additive by ingredient and maximum permitted use for the target market. NHC standard | Check approved formula, actual addition record and market-specific additive category. GB 2760-2024 applies to China; export rules are checked separately. |
| Allergen and cross-contact assessment | Declare inherent allergens and assess shared-line cross-contact from the actual facility schedule. FDA | Review line matrix, cleaning validation and buyer label approval. Do not claim a shared-line allergen or allergen-free status without facility evidence. |
08 / Defects & Foreign Matter
| Parameter | Specification / reference | Verification & order basis |
|---|---|---|
| Size conformity - Grade A | ≥90%Published reference | By count or weight, stated in specification. Programme: Grade A. |
| Size conformity - Premium A+ | ≥95%Published reference | By count or weight, stated in specification. Programme: Premium A+. |
| Split and broken beans - Grade A | ≤5%Published reference | By weight; halves and fragments included. Programme: Grade A. |
| Split and broken beans - Premium A+ | ≤2%Published reference | By weight; halves and fragments included. Programme: Premium A+. |
| Materially discolored beans - Grade A | ≤2%Published reference | Visual comparison under controlled light. Programme: Grade A. |
| Materially discolored beans - Premium A+ | ≤1%Published reference | Visual comparison under controlled light. Programme: Premium A+. |
| Clumps / loose ice - Grade A | ≤2% / ≤1%Published reference | Frozen-state inspection. Programme: Grade A. |
| Clumps / loose ice - Premium A+ | ≤1% / ≤0.5%Published reference | Frozen-state inspection. Programme: Premium A+. |
| Stone, glass, metal, insects, mould and rot - Grade A | AbsentPublished reference | Composite inspection and process controls. Programme: Grade A. |
| Stone, glass, metal, insects, mould and rot - Premium A+ | AbsentPublished reference | Composite inspection and process controls. Programme: Premium A+. |
| Intrinsic defect classification | Loose skins, split grains, discoloured grains, hard undercooked cores and foreign seeds. | Record each defect class separately by count or mass; state sample size, denominator and combined-limit rules. |
| Hazardous foreign matter | No foreign matter detected in the defined inspection sample; reject and investigate any finding.External reference Codex | Define visual-inspection sample size and detector challenge in the signed quality schedule. "None detected" is a sampling statement, not an absolute guarantee of zero particles. |
09 / Packaging Materials & Label
| Parameter | Specification / reference | Verification & order basis |
|---|---|---|
| Food-contact pack | Specify inner-contact material and obtain the applicable food-contact compliance declaration. NHC standard | Review film structure, supplier DoC, migration evidence and actual intended conditions. GB 4806 series is China-specific; EU export also checks Regulations 1935/2004 and 10/2011. |
| Carton and seal integrity | Define carton stacking strength, bag seal and puncture resistance for the confirmed net weight and pallet plan. EU source | Inspect pack drawing, compression/seal test and shipment configuration. |
| Label verification | Match product name, ingredient/allergen statement, net weight, lot/date, shelf life and storage instruction to the destination artwork. Codex | Approve artwork against the signed specification and destination rules. |
10 / Detection & Traceability
| Parameter | Specification / reference | Verification & order basis |
|---|---|---|
| Foreign-body detector | Validate Fe, non-Fe and stainless-steel challenge pieces for the actual product, aperture, pack and line; record the proven sensitivity. Codex | Challenge at defined start, changeover, interval and end points; retain rejection records. Do not copy generic detector sizes into a plant capability claim. |
| Lot traceability | Link input source lot, processing run, packaging code, test records, frozen storage and shipment to one finished lot. Codex | Trace one sample lot forward and backward in a recorded mock recall. Recall speed is stated only when the site has a validated target and record. |
