The main variables are cut geometry, wall thickness, seed and core removal, colour maturity, blanching condition, broken pieces, free-flow performance and the amount of surface water released after heating. Blanched and Unblanched Programs

Frozen sweet pepper standards allow product that may or may not be blanched. We do not treat these as interchangeable descriptions. A lightly blanched program uses a controlled heat step followed by rapid cooling and dewatering. It is normally selected when the customer wants enzyme deactivation, a defined further-heating response and reduced raw green notes. The time and temperature belong to the production record; the commercial specification states the resulting product condition and application target.

An unblanched IQF program retains a stronger fresh green-pepper aroma and firmer raw-frozen structure. It can fit pizza, sauce and prepared-food lines that already include an adequate cooking step. Because ordinary IQF freezing is not a lethality treatment, the intended use, downstream heat process and microbiological plan must be aligned. The label and product description must not imply ready-to-eat status unless the product and process genuinely support that use.

For either program, we approve the frozen appearance and the result after the customer's defined preparation. Record heating time, product-to-water or product-to-sauce ratio, final colour, firmness, skin separation, water release and flavour. This converts "crisp" or "good colour" into a repeatable application decision.

Grade A Size, Trim and Defect Specification

We use USDA frozen sweet pepper definitions as a reference for Type I green pepper, sliced strips and diced forms. The official U.S. grade name is used only when the applicable inspection and designation requirements are met. For normal commercial orders, the signed table below is the acceptance basis.

The limits below are a practical export starting program for frozen green bell pepper intended for further cooking. A complete COA identifies product name, colour, cut, blanching condition, batch number, production date, packing and specification version. Sensory, physical and microbiological fields then show the agreed limit and actual lot result separately. Pesticide and heavy-metal reports can remain as linked laboratory documents when the full panel is too large for the COA.

Sample Approval, Application Trial and Usable Yield

We label the approval sample with form, nominal cut, blanching status, lot, production date, ingredient declaration and frozen storage requirement. Inspect the fruit while frozen for colour, free flow, frost, clumps, size distribution, seed/core fragments and damaged units. Then test it under the same heating, sauce, dough, oil or steam conditions used by the production line.

For pizza and bakery toppings, record pieces per unit, colour after baking, scorching, water migration and adhesion to the topping system. For ready meals and stir-fry blends, record final firmness, strip or dice integrity, sauce dilution, colour contrast and portion distribution. For sauces and soup bases, compare nominal cut, pump or kettle handling, skin separation and finished particle identity. The correct purchasing choice depends on usable yield after the customer process, not only the price per metric ton.

A controlled thaw or cook test begins with a defined frozen sample weight and stated method. Retain released liquid when calculating drip or water release. Room-temperature thawing, refrigerated thawing and direct cooking produce different results and cannot be compared without the same conditions. The approved method and acceptance value are transferred to the specification when they are commercially important.

Receiving Inspection, Claims and Repeat Orders

At destination, record container and seal numbers, reefer setting, carton condition, product code, lot, arrival time and sampling locations before opening the selected cartons. Inspect representative units from different positions rather than relying on one carton near the door. Frozen inspection covers free flow, frost, clumps, cut size, colour, seed/core fragments, damaged units, net weight and packaging condition.

If a result is outside the signed tolerance, isolate the affected lot and retain unopened cartons, opened sample, dated photographs, scale or ruler evidence, temperature record and laboratory result. Each photograph should keep the carton label or lot identity visible. This evidence allows us to separate a production deviation from transport, storage or receiving damage and to investigate the correct batch.

Green pepper colour and wall thickness naturally vary with cultivar, maturity and crop period. Repeat-order control therefore uses a written range, approved sample description and batch results rather than a promise that every piece will look identical. Changes to origin, factory, cultivar, cut program, blanching step, packing material or test method are reviewed against the approved commercial basis before the new lot is released.
