These are current quotation starting points rather than dimensions that every market must use. A buyer can request another workable size, but a non-standard cut changes yield, cutting setup, sorting and minimum production planning. The approved specification should show the exact band and permitted variation.
How to Choose Whole Baby Corn
Whole cobs carry the strongest product identity. Use them when the customer expects to see baby corn clearly in a stir-fry, curry, meal kit or retail vegetable mix. Length affects plate coverage and piece count. Diameter affects bite, heating time and the risk of a fibrous center.
A 50–70 mm cob fits smaller portions and mixed packs where one long piece could dominate the fill. A 70–90 or 70–100 mm format gives a familiar foodservice presentation. Do not select length without diameter. Two 80 mm cobs can deliver different piece weights and cooking behavior if one is slender and the other approaches the maximum diameter. For portion costing, record average piece count per kilogram as development data, while keeping length and diameter as the contractual dimensions.

Range Cuts vs Fixed-Length Cuts
A range cut accepts pieces inside a declared interval. It gives the processor more recovery from the raw cob and can provide good value where the recipe tolerates visual variation. These formats should be approved in the final recipe. A clean daisy wheel may look attractive in a dry mix and become visually lost in a thick sauce. A half may survive gentle hand mixing and fracture under an aggressive factory agitator. Test the production system, not only the plate.
Measure Length and Diameter Consistently
Length is measured along the longest end-to-end dimension after freezing. Diameter is measured at the widest point. For an irregular or curved cob, those definitions matter. Measuring along the curve and measuring a straight line can produce different results.
Use a representative composite sample from more than one carton. Keep the product frozen enough to retain its shape, but remove loose frost that blocks the measuring point. Record the sample size and whether the result is by count or weight. Size conformity is normally most meaningful by count because the decision concerns individual pieces.
Our current starting point is at least 90% within the declared size for Grade A and at least 95% for Premium Grade. Grade A allows defined oversize and undersize variation, while a premium visible program uses tighter tolerances. Size Conformity Is More Useful Than an Average
An average length can hide a poor distribution. A sample containing many very short and very long pieces may produce the same average as a uniform target lot. Automated dosing, cooking and visual presentation respond to the distribution, not the arithmetic mean.
Report the percentage inside the band, oversize percentage and undersize percentage. Keep broken pieces separate where breakage created the short unit. Otherwise, a mechanically broken 20 mm piece may be counted only as undersize and the root cause remains invisible.
For a visible premium program, consider a reference image set that shows acceptable natural curvature, tip shape and color. Do not demand manufactured geometric uniformity from a young cob. The goal is controlled natural variation, not identical plastic pieces.
Control Woody Texture, Trim and Breakage
Size cannot compensate for overmaturity. A cob may fall inside the correct length band and still be fibrous or woody. Inspect the cut surface and run a cooked bite test. The center should be tender for the agreed application, without a hard developed core.
Trim defects include remaining husk, silk, stalk, dark ends and poorly cut surfaces. Whole cobs emphasize tip and base appearance. Cut products emphasize clean cut faces and freedom from excessive ragged fragments. Halves and daisy wheels need their own definitions because exposed surfaces make mechanical damage more visible.

Match the Cut to Cooking and Dosing
