Cut at about two-thirds of the kernel depth for whole-kernel corn; cutting too deeply can remove tough cob tissue. Portion the kernels before freezing so one pack matches one recipe or service batch.
A household can tray-freeze drained kernels briefly before bagging when loose separation matters. Spread them in a shallow layer, freeze until firm, then transfer them promptly into airtight packaging. This adds work, but it reduces the need to break apart a solid mass later. Cooling deserves equal attention. Move the ears into ice water immediately when the timer ends. A warm cob continues transferring heat into the kernels after it leaves the pot.
