IQF strawberry pieces and slices in frozen condition

Frozen strawberry pieces shown in the image; exact slice thickness is agreed in the order specification.

Specify sliced strawberries by thickness, not only by name

"Frozen strawberry slices" can mean thin topping slices, thicker bakery slices or mixed pieces. We make the cut specification explicit: the standard commercial directions are 6 mm, 8 mm and 10 mm thickness. A 5–15 mm project-specific thickness can be discussed against the intended application and approved sample.

We supply IQF free-flowing slices made from ripe, stemmed strawberries. Whole berries, halves, diced strawberries, bits and puree are related products, but they are not substituted for a sliced specification without your approval.

RFQ starting point: slice thickness; Grade A or B; Brix and colour direction; fine-piece tolerance; pack; destination; document panel; and whether the slices will be visible after thawing or baked into a finished product.

Commercial risks we control for IQF strawberry slices

Slice performance depends on fruit maturity, cut geometry, drainage before freezing, frozen-state sorting and pack protection. We use the agreed product standard to control the risks that affect bakery topping appearance, portioning, sauce yield and retail presentation.

Buyer concern Order risk What we control Buyer record or result
Uneven visible slices Mixed thickness can change topping coverage and thawed appearance. We confirm 6, 8 or 10 mm thickness, or a buyer-agreed range, before cutting. Cut direction stated on specification and sample approval.
Too many fines Small fragments can affect dosing, filling and visual presentation. We agree the fine-piece threshold and inspect frozen samples by weight. Physical-inspection entry on the release record.
Soft or damaged fruit Overripe material increases drip and reduces slice integrity. We sort for maturity, damage, mould/decay, off-colour and unsuitable pieces before and after freezing. Buyer-approved grade and defect tolerance.
Clumping or frost Poor drainage or temperature fluctuation affects free flow. We drain, IQF freeze, inspect the frozen state, pack and hold at −18°C or below. Frozen storage and shipment instruction.
Missing batch evidence Generic documents cannot identify the shipped lot. We connect product code, batch code, production date, COA and shipment documents. Batch COA and traceability document set.

Product forms and cut options

Our main supply item is IQF strawberry slices. Standard slice directions are 6 mm, 8 mm and 10 mm thickness. We can discuss a buyer-defined range, but we first review whether the requested thickness is appropriate for the berry size, target breakage level and final application.

Whole 15–25 mm, whole 25–35 mm, halves, 10 × 10 mm diced, bits/crumbles and puree are separate formats. Use slices for visible fruit layers, toppings, bakery and dessert applications; select diced or crumbles when a uniform small particle is more important than a slice profile.

Raw-material condition before cutting

We check the incoming strawberry lot for maturity, red colour, visible damage, decay, off-odour and foreign material before it enters the slicing programme. Whole berry dimensions guide the practical slice direction: a small berry may not deliver the same visible slice profile as a larger berry at the same nominal thickness.

We use an approved reference sample to align fruit condition and slice appearance before the commercial lot. This is especially useful for bakery topping and dessert projects in which the berry cross-section remains visible after thawing or heating.

IQF Frozen Strawberry Slices - commercial specification

We use the following reference as the starting specification for unsweetened, individually quick frozen strawberry slices. The final agreement identifies the selected thickness, grade, defect limits, pack and document requirements. A range in the table is a contractual acceptance direction; the COA records actual results for the released batch.

Item Standard direction Commercial note
Product name IQF Frozen Strawberries Sliced Unsweetened frozen fruit ingredient; no syrup is assumed.
Raw material Ripe, stemmed strawberries Variety can be discussed: American No.13, Sweet Charlie, Honey or buyer-approved equivalent.
Origin and supply China; frozen-stock supply coordinated year-round Crop availability and approved variety are confirmed with the order plan.
Grade Grade A or Grade B Grade A has the tighter colour, condition and defect direction; written buyer acceptance limits govern the shipment.
Slice thickness 6 mm, 8 mm, 10 mm 5–15 mm can be discussed for a defined industrial project.
Processing Sorted, stemmed, washed, sliced, drained, IQF frozen, inspected and packed IQF means pieces are frozen as individually separable units under proper frozen handling.
Colour and flavour Natural red to dark red; characteristic ripe strawberry flavour and odour Variety and maturity affect the natural colour range.
Brix 7–11°Bx Measured on thawed, homogenised representative material; actual batch result shown on COA where agreed.
pH 3.0–4.0 Relevant to puree, beverage, sauce and fruit-preparation projects.
Foreign matter Absent Visual sorting and agreed foreign-material control are part of the production plan.
Shelf life and storage 24 months at −18°C or below Applies to unopened product kept continuously in the frozen chain.

Fine pieces, defects and grade acceptance

For a 10 mm slice programme, we can use the following commercial reference points: pieces below 5 mm ≤5% by weight, 10–20 mm oversize pieces ≤5%, and pieces above 20 mm absent. These figures are a practical starting direction, not a substitute for your approved sample.

For Grade A, we agree the tolerances for broken or damaged slices, white/underripe pieces, dark or brown discoloration, soft fruit, cap stems, plant debris and mould/decay before production. We state the sampling basis, whether the defect is counted by weight or count, and the acceptance rule in the product specification.

Batch COA and microbiological programme

We provide a batch COA for the product lot being released. The COA identifies the product form, batch number, production date, best-before date, pack, storage instruction and actual test results. A generic specification sets acceptance criteria; it does not replace a shipment-batch COA.

Test item Standard commercial limit COA record
Total plate count < 10,000 CFU/g Actual result in CFU/g for the released batch.
Yeast and mould < 10,000 CFU/g Actual result in CFU/g for the released batch.
Coliforms < 100 CFU/g Actual result in CFU/g for the released batch.
E. coli < 100 CFU/g Actual result in CFU/g for the released batch.
Salmonella Absent in 25 g Pass/absent result when included in the agreed panel.
Listeria monocytogenes Absent in 25 g when specified Pass/absent result for the agreed programme.

Residues and heavy metals: We arrange the applicable pesticide-residue and Pb/Cd test panel for the destination market or customer programme. The report identifies the analysed lot and reports actual values and reporting limits; we do not present destination limits as if they were the shipment's test results.

Processing flow for sliced IQF strawberries

We receive fruit by defined lot, check maturity and condition, remove stems and unsuitable material, wash, slice to the approved thickness, drain surface water and freeze the pieces individually. Frozen-state inspection then focuses on free flow, slice condition, frost, colour, foreign matter and the agreed fine-piece limit.

We weigh and pack the frozen slices into the approved inner bag and export carton. Lot coding then links raw-material, processing, packing, frozen storage and shipment records. We do not use blanching as standard wording for ordinary IQF strawberry slices.

Factory checkpoints that matter to a sliced product

We check raw material for ripeness, decay, foreign matter and visual defect before slicing. During cutting, we verify the approved thickness and avoid mixing a diced or crumble programme into a sliced order. Before packing, we review frozen free-flow condition, frost, clumps, visible defect, net weight, seal condition and carton marking.

For a buyer's incoming-inspection file, we can coordinate the product specification, COA, microbiology report, pesticide-residue report, heavy-metal report, certificate copies, packing list, commercial invoice and traceability information according to the approved order and destination requirement.

Bulk packing, retail packs and private label

We match the pack to the distribution channel and handling method. Industrial and foodservice projects normally use a food-grade blue PE bag in a 10 kg carton. We can discuss 5 kg foodservice packs, 1 kg consumer bags and buyer-approved retail configurations. Printed retail packaging requires the approved artwork, label language, barcode, net-weight declaration, carton mark and market claim review before production.

Supply channel Pack direction Information we confirm
Industrial / foodservice 10 kg blue PE bag in export carton; 5 kg pack by agreement Slice thickness, net weight, inner liner, carton strength and pallet plan.
Retail / private label 1 kg bag or buyer-approved retail bag/carton Artwork, barcode, language, retail label, shelf-life statement and outer-carton marks.
Mixed frozen container Compatible frozen packs in one loading plan Temperature, carton dimensions, destination documents and loading sequence.
Company certificate display wall

Company certificate display wall; it supports corporate compliance review and is not a strawberry-batch COA.

Certificates, documents and traceability

We provide product-specific and shipment-specific documents separately from corporate certificates. The product specification defines the slice, grade, pack and acceptance direction. The COA reports results for the identified batch. Invoice, packing list and transport documents support import clearance and receiving checks.

Where your programme requires a named certificate, laboratory report, allergen statement, organic-project document or customer format, include it in the inquiry. We confirm the document scope against the exact facility, product, destination and order agreement rather than using a generic badge as a product claim.

Frozen storage and reefer shipment

We hold and transport the product at −18°C or below. We plan the shipment against the agreed carton, pallet and destination requirement. A 40-foot reefer normally carries about 23–25 MT, depending on the package and pallet configuration; we state the planned net load on the proforma invoice instead of using one fixed capacity for every order.

We review container cleanliness, odour risk, reefer set point, carton condition, seal data and document requirements before dispatch. Avoiding repeated thawing and refreezing remains essential to protect the IQF free-flow condition, reduce frost and limit texture damage in transit.

Application matching for sliced strawberries

Bakery and pastry
Use 6–10 mm slices where visible fruit coverage and a defined fine-piece level matter in fillings, toppings and layered products.
Dessert and dairy
Specify colour, slice integrity and thawed texture for yogurt, ice cream inclusions, fruit cups and dessert toppings.
Foodservice
Use 5 kg or 10 kg frozen packs where portioning, free flow and carton handling guide the pack choice.
Industrial fruit preparation
Confirm Brix, pH, particle size and permitted fines when slices are blended into sauces, fruit preparations or further processing.
