Cap and stem proportions
Method D16-01 · proposed order procedure · reviewed 17 October 2026
Definition: Cap, usable stem and basal/root trim are species- and style-specific; shiitake stem is not a button-mushroom stem.
Sample state: As received frozen IQF, species/style/treatment declared; separate cooked aliquot only after safe-use approval.
Sampling and quantity: Use P1: five sampling positions and separate 500 g analytical units for the proposed contract pilot; preserve pack/stratum identity and use a separate matched unit for destructive tests.
Inspection procedure: Declare species, whole/sliced/diced style and fresh/blanched/roasted/sautéed treatment. Covered-thaw enough to separate caps, edible stems and basal/root trim without compression; for whole units measure stem from cap junction to cut base.
Calculation and reporting: Fraction g/total plant food g; overlength whole stems/inspected whole units, with n; reconcile loose material. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.
Product control response: Processor species segregation and stem-trim settings. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.
Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Species and treatment identity, stem trim, slicer setting, substrate-cleaning checks and cook protocol.
Hold and release: Release to species/style-specific contract, never one universal cap:stem ratio. The actual processor QC identifies and holds the affected lot/stratum, documents any permitted rework and retest, and its authorized quality manager signs release only after the signed criterion and independent safety checks pass; GreenLand coordinates buyer review.
Source applicability: P06 USDA AMS CID A-A-20376, 5 Oct 2021, §3 option menu and §6 product requirements apply only if this CID and chosen species/style/application are in a procurement order. §6.4.3 <=10% by weight excessively soft/fibrous/rubbery and §6.4.4 <=10% by weight ragged mechanical damage are CID procurement criteria, not general mushroom grades. §6.4.6 foreign material distinguishes prohibited contamination and limited harmless material. Open caps and gills
Method D16-02 · proposed order procedure · reviewed 17 October 2026
Definition: Open cap and visible gills may be normal for mature portabella; gill color alone is not decay in shiitake or button.
Inspection procedure: For whole-cap SKU only, photograph underside of ≥100 systematic caps per pack while frozen and after covered thaw; compare with species/maturity photo anchor. Diced/sliced SKU receives gill color/appearance check by mass, not an open-cap count.
Calculation and reporting: Whole open-cap count/whole caps examined; species-specific gill abnormality count or mass with chosen basis. Record wet/odorous tissue as escalation event. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.
Product control response: Processor growth-stage sort and decay investigation. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.
Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Species and treatment identity, stem trim, slicer setting, substrate-cleaning checks and cook protocol.
Hold and release: Hold only deviations from declared species/style or spoilage evidence; do not reject normal gills as a universal defect.
Substrate and root material
Method D16-03 · proposed order procedure · reviewed 17 October 2026
Definition: Substrate particles, adhering soil, woody root/base and unrelated foreign matter are different sources.
Inspection procedure: Inspect each 500 g frozen unit on white tray; separately identify substrate, soil/grit, basal/root trim, wood/straw and other hard foreign material, retaining photo and object. Do not treat suspect contamination as allowed harmless material.
Calculation and reporting: Substrate and basal g/net mushroom food g, harmless botanical pieces/actual kg; every soil/grit/hard object logged individually. P06 §6.4.6 only if selected CID: no listed contamination, and no more than one harmless extraneous piece per 2.8 kg (100 oz) not longer than 2.5 cm (1 inch), subject to the full clause. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.
Product control response: Processor intake trim and foreign-material program; QC hazard review. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.
Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Species and treatment identity, stem trim, slicer setting, substrate-cleaning checks and cook protocol.
Hold and release: Segregate and investigate suspected insect/physical-hazard material through the actual processor's food-safety system; do not apply an appearance allowance to it. For nonhazard classes, buyer signs limits and allowed rework; processor QC holds/retests and its authorized quality manager signs release, with GreenLand coordinating the evidence.
Mechanical damage
Method D16-04 · proposed order procedure · reviewed 17 October 2026
Definition: Natural gill edge or a clean designed slice is not crushing; ragged tear and compressed/macerated tissue are separate.
Inspection procedure: Declare species/style/treatment and signed nominal slice thickness. Measure 100 systematic pieces per pack; separate deliberate diced edges, ragged tears and compressed/macerated tissue. For selected P06 CID, assess mechanized damage by weight.
Calculation and reporting: Ragged/compressed damaged piece g/net mushroom food g for CID comparator; optional ragged count/100 slices separately; thickness mm distribution. P06 §6.4.4 10% by weight applies only selected CID procurement scope. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.
Product control response: Processor slicer blade/feed pressure and freezer-transfer comparison. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.
Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Species and treatment identity, stem trim, slicer setting, substrate-cleaning checks and cook protocol.
Hold and release: Release only within signed style/tear band; approved diced style must not be scored as damaged slice.
Texture after safe preparation
Method D16-05 · proposed order procedure · reviewed 17 October 2026
Definition: Over-soft, rubbery and fibrous mushroom textures and free liquid are separate after-preparation results.
Inspection procedure: Declare species, cut and treatment. If P06 CID is contracted, judge sufficiently thawed product under section 6.4.3 and record texture-defect mass. For a separate buyer cooking trial use a matched 500 g portion and a documented pan/load/heat/recipe protocol that achieves the validated safe endpoint; record elapsed time rather than assuming five minutes is safe for every mushroom SKU. Collect poured liquid for 60 s after the defined cooking endpoint; taste only after safety-approved preparation.
Calculation and reporting: P06 CID: excessively soft+fibrous+rubbery piece g/net mushroom food g (one piece counted once) ×100; selected CID criterion ≤10% by weight. Trial: collected liquid g/initial frozen food g, cooked retained g and mass balance; anchored texture scores separately. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.
Product control response: Processor species/treatment/pretreatment and freezer history; separate safety release. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.
Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Species and treatment identity, stem trim, slicer setting, substrate-cleaning checks and cook protocol.
Hold and release: If the purchaser selects P06 CID, apply its §6.4.3 ≤10% by-weight combined excessively soft/fibrous/rubbery criterion on the declared product and all other applicable order terms. Cook-trial liquid/sensory limits are separately signed. Actual processor QC holds, investigates and retests failures; its authorized quality manager releases after separate safety checks; GreenLand coordinates the evidence.
