Calyx and stalk material

Method D12-01 · proposed order procedure · reviewed 17 October 2026

Definition: Attached cap, loose cap/sepal, attached short stem and loose stem are separate USDA strawberry terms.

Sample state: As received frozen whole or sliced style; separate controlled-thaw aliquot for drip and character.

Sampling and quantity: Use P1: five sampling positions and separate 500 g analytical units for the proposed contract pilot; preserve pack/stratum identity and use a separate matched unit for destructive tests.

Inspection procedure: Keep whole and sliced SKUs apart. For contract pilot inspect whole fruit after controlled partial thaw sufficient to separate; classify attached cap, loose calyx/sepal, attached stem and loose stem per P07 photos. For sliced use separate weighed fruit ingredient after excluding packing medium.

Calculation and reporting: Whole: affected fruit count/total fruit count by class; sliced: botanical class g/total strawberry-ingredient g. If claiming USDA grade use §52.1991 official whole 32 oz or sliced 16 oz representative aliquot when original container exceeds 16 oz, and the exact defect scoring. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.

Product control response: Processor de-capping and trimming setup. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.

Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Harvest maturity, de-capper and slicer setup, freezer transfer and frozen-pack temperature history.

Hold and release: Reclean and resample if signed style-specific plant-matter criterion fails; follow official grade method only if grade is explicitly contracted. The actual processor QC identifies and holds the affected lot/stratum, documents any permitted rework and retest, and its authorized quality manager signs release only after the signed criterion and independent safety checks pass; GreenLand coordinates buyer review.

Source applicability: P07 USDA AMS Frozen Strawberries, 1 Feb 1958, §§52.1981-1992: whole versus sliced rules differ. §52.1987 color evaluates whole by count and slices by weight of strawberry ingredient; cut faces excluded. §52.1991 official thaw/analysis: up to 16 oz entire sample; above 16 oz, representative 16 oz sliced or 32 oz whole; do not replace with P1 for official grade.

Broken and soft fruit

Method D12-02 · proposed order procedure · reviewed 17 October 2026

Definition: Crushed whole berry, physically separated fragment, intended slice and soft but intact berry are distinct.

Inspection procedure: Classify whole berries and slices separately while frozen, then use a separate covered thaw at 4±2°C to ice-free for soft-character assessment; do not count intended slices as damage.

Calculation and reporting: Whole affected berries/whole examined count; sliced damaged fruit g/total strawberry ingredient g; soft intact g separately. Apply P07 character/defect scoring only under official grade route. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.

Product control response: Processor pack pressure/freezer-transfer investigation. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.

Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Harvest maturity, de-capper and slicer setup, freezer transfer and frozen-pack temperature history.

Hold and release: Do not classify intended slices as damage; hold by signed whole/sliced defect and texture criteria.

Colour and maturity

Method D12-03 · proposed order procedure · reviewed 17 October 2026

Definition: Characteristic outer red color must be judged differently for whole berries and slices; cut surfaces are excluded for slices.

Inspection procedure: Assess immediately after thawing until separable and free of ice crystals under P07 section 52.1985. For the A colour factor in section 52.1987(a), the overall mass must have the specified reasonably uniform characteristic pink/red colour. At least 85% of whole berries by count, or slices by strawberry-ingredient weight, must have good characteristic pink/red over practically the entire applicable surface; exclude slice cut faces. No more than 5% may fall into the specified low-colour/materially darkened remainder: less than four-fifths of the whole-berry surface or less than one-half of the slice outer surface, respectively.

Calculation and reporting: Whole: qualifying fruit count / all whole fruit count x100%; low-colour remainder count / same denominator x100%. Sliced: qualifying slice mass / all strawberry-ingredient mass x100%; low-colour remainder mass / same denominator x100%. Retain both tallies and overall-colour observation. These are selected A-factor conditions, not a whole USDA grade or import limit; the contracted grade requires all factors, limiting rules and official lot plan. P1 remains a separate contract pilot.

Product control response: Processor maturity sort; buyer signs style/grade or separate color reference. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.

Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Harvest maturity, de-capper and slicer setup, freezer transfer and frozen-pack temperature history.

Hold and release: If USDA grade is invoked, apply its exact style/grade provisions; otherwise sign a buyer color band and release to it.

Size distribution

Method D12-04 · proposed order procedure · reviewed 17 October 2026

Definition: Whole-fruit diameter, piece mass and sliced thickness describe different strawberry styles.

Count every applicable intact unit in selected packs where feasible; record n and any mass not countable.

Inspection procedure: Measure every identifiable whole berry in 500 g pack frozen along greatest diameter without compressing; slices separately measure 100 systematic pieces per pack and report thickness.

Calculation and reporting: Whole off-band fruit/whole fruit count, diameter mm and mass g distributions; slice thickness n, median/range and mass of fines if contracted. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.

Product control response: Processor size grader and slicer settings. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.

Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Harvest maturity, de-capper and slicer setup, freezer transfer and frozen-pack temperature history.

Hold and release: Release against signed style-specific size/portion profile, not a single average.

Thaw drip

Method D12-05 · proposed order procedure · reviewed 17 October 2026

Definition: Drip loss is liquid released after a defined thaw, not the same as broken-fruit mass.

Inspection procedure: Use matched separate 500 g sealed fruit portion in covered perforated insert over tared vessel; thaw at 4±2°C until ice-free, then gravity drain 2 min without pressing, weigh liquid and retained fruit immediately. Document pack media/syrup if any; use separate method for syrup packs.

Calculation and reporting: Free-drip g/initial frozen net fruit g ×100; report retained fruit g and mass balance, per pack and summed masses. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.

Product control response: Processor QA examines freezing/handling and cold-store event logs. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.

Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Harvest maturity, de-capper and slicer setup, freezer transfer and frozen-pack temperature history.

Hold and release: Use exact agreed thaw protocol and drip limit; do not infer microbial safety from low drip.

Cap stems

Method D13-01 · proposed order procedure · reviewed 17 October 2026

Definition: Short pedicel, large twig and attached cluster are distinct foreign-plant and presentation findings.

Sample state: As received frozen, cultivated or wild Vaccinium type; separate controlled-thaw aliquot if character checked.

Sampling and quantity: Use P1: five sampling positions and separate 500 g analytical units for the proposed contract pilot; preserve pack/stratum identity and use a separate matched unit for destructive tests. For P15 official blueberry grade, use its separate 16 oz net-weight equivalent and native/cultivated type rules.

Inspection procedure: Declare cultivated or native/wild. Inspect all berries in the frozen 500 g unit after sufficient ice-crystal clearance to handle; separate loose large stems/leaves, cap stems and clusters. Under P15 a cluster means ≥3 joined cap stems; retain per-container counts for wild-type allowance.

Calculation and reporting: Pilot: stemmed berry count/berries examined, cluster count per pack, loose botanical pieces/kg. Official P15: cap-stem condition plus large leaf/stem counts and wild/cultivated cluster numbers per 16 oz net weight equivalent; do not convert 16 oz to 1 kg. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.

Product control response: Processor destemmer/sort and harvest branch-ingress record. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.

Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Declared cultivated/wild type, destemmer/size-grader settings, optical-sort rejects and freezer-pack history.

Hold and release: Hold physical contaminants; compare small-stem categories to buyer or named USDA grade method only for correct berry type. The actual processor QC identifies and holds the affected lot/stratum, documents any permitted rework and retest, and its authorized quality manager signs release only after the signed criterion and independent safety checks pass; GreenLand coordinates buyer review.

Source applicability: P15 USDA AMS Frozen Blueberries effective 22 May 1957, corrected/reprinted 24 Apr 2026 (not a new grade). §§52.611-620 distinguish native/wild versus cultivated. §52.617 defect allowances per 16 oz net weight = 453.592 g, with type-specific cluster rules; §52.616 Grade A color permits at most 5% red-purple by count; §52.618 Grade A character permits at most 6% crushed/mushy/broken by weight. Those are selected-grade factors, not stand-alone purchase tolerances.

Unripe and shrivelled fruit

Method D13-02 · proposed order procedure · reviewed 17 October 2026

Definition: Unripe berry differs from naturally lighter cultivar color; shrivel reflects dehydration, not ripeness alone.

Sample state: As received frozen, cultivated or wild Vaccinium type; separate controlled-thaw aliquot if character checked.

Sampling and quantity: Use P1: five sampling positions and separate 500 g analytical units for the proposed contract pilot; preserve pack/stratum identity and use a separate matched unit for destructive tests. For P15 official blueberry grade, use its separate 16 oz net-weight equivalent and native/cultivated type rules.

Inspection procedure: After ice-crystal clearance, classify red-purple, green/undercolored, undeveloped/mummified and shriveled-dry separately under signed type/cultivar photos. Cut doubtful berries only for supplemental assessment.

Calculation and reporting: Pilot separate count classes/total berries. P15 Grade A red-purple ≤5% by count is color factor; green/undeveloped are §52.617 defect counts per 16 oz, with combined/subset allowances. Do not label all red-purple unripe. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.

Product control response: Processor maturity sort and storage dehydration review. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.

Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Declared cultivated/wild type, destemmer/size-grader settings, optical-sort rejects and freezer-pack history.

Hold and release: Release by agreed type-specific profile; route borderline ripeness to a functional use only with buyer approval.

Split fruit and juice clumps

Method D13-03 · proposed order procedure · reviewed 17 October 2026

Definition: Split skin, leaking berry and clear juice ice are distinct; cluster of intact berries is not necessarily split fruit.

Sample state: As received frozen, cultivated or wild Vaccinium type; separate controlled-thaw aliquot if character checked.

Sampling and quantity: Use P1: five sampling positions and separate 500 g analytical units for the proposed contract pilot; preserve pack/stratum identity and use a separate matched unit for destructive tests. For P15 official blueberry grade, use its separate 16 oz net-weight equivalent and native/cultivated type rules.

Inspection procedure: Inspect ice-free-handlable berries before any force; classify split/leaking, crushed/mushy/broken, intact contact cluster and free juice ice separately. Use a matched aliquot for thaw character.

Calculation and reporting: Pilot split count/berry count, hard-cluster g/net food g, free-ice g/as-received contents g. For P15 character assess crushed+mushy+broken together by weight; Grade A selected factor ≤6% by weight with full grade rules. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.

Product control response: Processor washer pressure, freezer load and cold-chain investigation. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.

Soluble solids, acidity and maturity

Method D15-04 · proposed order procedure · reviewed 17 October 2026

Definition: Mango sweetness, acid balance and maturity are use-specific; soluble solids alone do not establish ripe flavor or safety.

Sample state: As received frozen peeled chunks; matched covered-thaw aliquot for drip, fiber or compositional test.

Sampling and quantity: Use P1: five sampling positions and separate 500 g analytical units for the proposed contract pilot; preserve pack/stratum identity and use a separate matched unit for destructive tests.

Inspection procedure: Thaw each matched portion covered at 4 +/-2 C to ice-free. Homogenize several dice from each position and take duplicate soluble-solids readings with a water-zeroed refractometer at 20 C or a documented temperature-compensated condition. For the proposed acidity comparison weigh 10.00 g homogenate, add water to disperse, and titrate the entire dispersion with standardized nominal 0.100 N NaOH to pH 8.20 using a calibrated pH meter; run a water/reagent blank. No aliquot dilution factor is needed when the full dispersion is titrated.

Calculation and reporting: Report each position degree Brix, both readings and sample temperature. Proposed TA as anhydrous citric acid g/100 g = (Vsample - Vblank) mL x actual NaOH N x 0.06404 x100 / original homogenate mass g. Record endpoint, blank, mass and normality. This is citric-acid equivalent, not a measurement of citric acid alone; agree another acid equivalent if the buyer needs it. Compare Brix and TA per position; a Brix/TA ratio must name both methods and does not establish microbial safety.

Product control response: Processor maturity sort; buyer chooses acceptance ranges and flavor reference. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.

Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Cultivar/harvest lot, peel/pit station, dicer setting, optical-sort rejects and freezer-pack history.

Hold and release: Approve a signed use-specific range and sensory reference plus separate safety plan; no universal Brix guarantee. The actual processor QC identifies and holds the affected lot/stratum, documents any permitted rework and retest, and its authorized quality manager signs release only after the signed criterion and independent safety checks pass; GreenLand coordinates buyer review.

Source applicability: Proposed GreenLand order methods for the named mango cultivar, cut and use. The linked supplier guide provides product context. Preparation quantities, time and temperature in this card are test settings; Brix, acidity, fibre, size and loss limits are buyer terms, while safety and ready-to-eat status need their own validation.

Calculation and reporting: Intact dice count/all identifiable dice ×100; free drip g/initial frozen net food g ×100; separate lost/unidentifiable mash g. Retain all five results. Pool only matching ratios by summed numerators and denominators; report non-ratio measurements separately.

Product control response: Processor freezer and storage investigation; RTE claim only after independent validation. Record adjustment time and affected lot boundary; inspect pre/post adjustment material before deciding rework.

Records: Record lot/pack/harvest identity, sample weight and count, method revision, equipment calibration where used, photographs of each class, raw tally, operator/date and any rework/retest. Retain Cultivar/harvest lot, peel/pit station, dicer setting, optical-sort rejects and freezer-pack history.

Hold and release: Release by matched thaw/line performance; label RTE only after actual process/use validation, never freezing alone.
