Frozen Bamboo Shoots for Bulk, Foodservice and Private Label
We supply peeled, trimmed, heat-treated and individually quick frozen bamboo shoots for importers, Asian food distributors, hot-pot and soup programs, ready-meal factories, central kitchens and retail frozen brands.
We write the cut, exact dimensions, fibre tolerance, heat-treatment status, hydrogen cyanide release limit, packing and destination-market documents into the order specification. The standard product is not ready-to-eat and carries a cook-thoroughly instruction.
A physical size check makes strip width, thickness and length judgeable before repeat orders.
What Frozen Bamboo Shoot Buyers Need to Confirm
Search results mix household freezing advice, canned bamboo shoots and industrial IQF supply. Commercial orders require a clearer distinction between product form, heat-treatment condition and final-use safety.
| Buyer concern | Order risk | Our control | Order result |
|---|---|---|---|
| Slice, strip and dice are confused | Wrong bite and portion weight | Drawing, three dimensions and retained sample | Repeatable cut standard |
| Hard or woody pieces | Poor texture after reheating | Tender raw-material selection, base trimming and fibre grading | Grade A fibre limit ≤1.0% |
| Natural cyanogenic glycosides | Inadequate preparation or label risk | Peeling, cutting, validated moist-heat treatment and optional HCN test | ≤10 mg/kg standard or ≤2 mg/kg strict program |
| Browning, black spots or peel | Visible defects in retail and ready meals | Pre-freezing trim, color sort and final frozen inspection | Declared visual-defect limit |
| Missing batch evidence | Delayed QA release or clearance | Lot code links raw material, thermal record, packing and COA | Complete shipment QA file |
Cut Styles and Order Dimensions
Whole, half, slice, strip and dice follow established commercial presentation terms. Every quotation identifies dimensions in millimetres and whether the size is nominal or an acceptance range.
| Style | Commercial dimensions | Main application | RFQ point |
|---|---|---|---|
| Whole / tips | 40–80 mm or 60–100 mm length | Premium hot pot, curry, repacking | Tip/base ratio and maximum diameter |
| Half | Longitudinal halves, 40–80 mm | Foodservice and further cutting | Base trimming and thickness |
| Slices | 3–5 mm thick × 10–15 mm wide × 30–60 mm long | Stir-fries, soups, retail packs | Crosswise or longitudinal slice |
| Strips | 4×4×30–50 mm; 6×6×30–60 mm | Spring rolls, noodles, mixed vegetables | Cross-section and short-piece limit |
| Dice | 5×5×5 mm; 6×6×6 mm; 10×10×10 mm | Fillings, fried rice, ready meals | Nominal size and undersize tolerance |
| Chunks / random cuts | 20–40 mm or 30–50 mm | Curries, stews, industrial processing | Maximum small-piece and woody-piece limits |
Strip lots are checked for width, length, short pieces, peel residue and free-flowing condition.
Slice direction and thickness are confirmed because they change bite, cooking time and portion yield.

Processing Flow and Thermal Control
We check tenderness, age, decay, insects, soil and traceability code.
We remove sheaths, hard bases, damaged tissue and visible dark areas.
We wash the edible tissue and control soil, grit and peel remnants.
We set blades and graders to the signed slice, strip, dice or chunk dimensions.
Reference program: 95–100°C for 8–15 minutes, adjusted by cut and validated release criteria.
We cool promptly and remove surface water to reduce soft texture and ice buildup.
We freeze pieces separately until the product thermal centre reaches −18°C or below.
We sort, metal-detect, weigh, seal, code and place released cartons in frozen storage.
Grade and Defect Acceptance
We inspect frozen samples against measurable defect categories rather than a general "good quality" description.
| Parameter | Grade A | Standard | Inspection basis |
|---|---|---|---|
| Woody / excessively fibrous pieces | ≤1.0% w/w | ≤3.0% w/w | Cut and bite assessment after cooking |
| Brown, black or strongly discolored pieces | ≤1.0% w/w | ≤2.0% w/w | Frozen visual sort |
| Peel / sheath remnants | ≤0.5% w/w | ≤1.0% w/w | Visible non-edible surface tissue |
| Out-of-size / broken pieces | ≤5.0% w/w | ≤10.0% w/w | Signed dimensional range |
| Stuck pieces / clumps | ≤5.0% w/w | ≤10.0% w/w | Gentle hand separation at frozen state |

| Listeria monocytogenes | Absent in 25 g | <100 CFU/g for NRTE program | Agreed market program |
Natural Toxin, Chemical and Residue Specification
Raw bamboo shoots naturally contain cyanogenic glycosides. We separate the heat-treatment record from the finished-product HCN test so the buyer can audit both process control and analytical release.
| Item | Release value | Program note |
|---|---|---|
| Total hydrocyanic acid, expressed as HCN | ≤10 mg/kg standard; ≤2 mg/kg strict | Buyer-agreed finished-product limit; strict value requires confirmed laboratory method and sampling plan |
| Lead (Pb) | ≤0.10 mg/kg | Strict stem-vegetable export baseline |
| Cadmium (Cd) | ≤0.03 mg/kg | Strict stem-vegetable export baseline |
| Pesticide residues | Comply with destination MRL; EU default 0.01 mg/kg where no specific MRL exists | Multi-residue screen by market and crop program |
| Added sulphites | Not added in standard formula | Any functional additive must be declared and approved |
| Preservatives / artificial colors | None in standard 100% bamboo shoot formula | Ingredient statement verified against production record |
Metal Detection, Weight and Seal Control
Fe 1.5 mm · Non-Fe 2.0 mm · SUS 2.5 mm as the standard reference capability.
Checkweigher or verified scale records are matched to declared retail or bulk net weight.
We inspect seal contamination, weak seals, pinholes, bag leakage and carton closure.
Product, lot, production date, best-before date, storage and cooking statement are checked.
Packaging and OEM Programs
| Channel | Standard packing | Items confirmed before production |

Certifications, COA and Batch Documents
We connect the finished lot number to raw-material intake, processing date, thermal record, cut-size inspection, metal detector challenge, packing code, cold-store entry and shipment record.
Certification scope, factory name and validity are matched to the actual shipment program. Organic, Halal, Kosher or other special status is quoted only against an applicable current certificate.
Representative document archive; current certificate scope and validity are checked against the selected processing facility.
Batch Traceability from Intake to Shipment
Category-wide traceability evidence: raw-material records, QC verification, COA review, packing identification and shipment release.
Supplier, harvest, intake date
Cut, heat treatment, IQF date
Bag, carton, code, weight
Cold store, container, documents
Application Matching
Whole tips, 40–80 mm halves or 6×6 mm strips; 2.5 kg foodservice packs and a tighter woody-piece limit.
20–40 mm chunks or 3–5 mm slices selected for consistent heating and visible portion size.
5, 6 or 10 mm dice reduce preparation and help control weight per dumpling, roll or rice portion.
4×4 mm strips or 10 mm dice matched to the neighboring vegetables, bag weight and reheating method.
Consumer-facing cut, cooking statement, 300–1,000 g bag, barcode and destination-language artwork.
Bulk cartons, declared HCN program, incoming-QA documents and cut tolerances matched to the next process.
Commercial Communication and Order Review
Buyer discussions connect sample evaluation with cut, packing, market documents and loading plans.
We review the RFQ before quoting so the same word-such as "strip" or "cooked"-does not create different expectations between purchasing, QA and production.
For a first order, we can align a reference photo, dimensional drawing, written defect limits, cooking status, packaging artwork and pre-shipment sample approval in one specification file.
Cold Storage and Reefer Loading
- Finished product storage: −18°C or below.
- Reefer set point: normally −18°C, subject to the signed shipment plan.
- We check carton condition, lot marks, quantity, container cleanliness and pre-cooling status.
- Pallet use changes load quantity; the packing/loading calculation is confirmed before contract.
- Temperature recorder placement and document copy can be included in the pre-shipment file.
A loading record supports carton count, stacking condition and frozen-container handover.
Frozen Bamboo Shoots FAQ
1. Are frozen bamboo shoots raw or cooked?
Our standard product is peeled and heat-treated before IQF freezing, but it is supplied as NRTE. The label instructs the user to cook thoroughly.
2. Why do bamboo shoots require heat treatment?
Fresh bamboo shoots naturally contain cyanogenic glycosides. Peeling, cutting and boiling/moist heating reduce the resulting hydrogen cyanide; freezing alone is not the control step.
3. Can you provide a hydrogen cyanide result?
Yes. The commercial release options are ≤10 mg/kg total HCN or ≤2 mg/kg for a strict program, with method and sampling plan stated in the order specification.
4. Which bamboo shoot cuts are available?
We quote whole tips, halves, slices, strips, 5–10 mm dice, 20–50 mm chunks and buyer-specific cuts.
5. What is the difference between slices and strips?
Slices are broader pieces with a declared thickness; strips have a narrower, more uniform cross-section. The quotation lists all three dimensions to avoid ambiguity.
6. How do you control hard or woody pieces?
We select young shoots, trim hard bases and inspect cooked texture. Grade A limits excessively fibrous or woody pieces to 1.0% by weight.
7. Is the standard product additive-free?
The standard ingredient is 100% bamboo shoot with no added preservative, artificial color or sulphite. Any citric-acid option is declared before order confirmation.
8. What COA values are available?
The COA can include TPC, coliforms, E. coli, yeast and mould, Salmonella and Listeria. HCN, pesticide residues and heavy metals are added to the agreed test program.
9. What bulk packs can you supply?
Standard formats include 4×2.5 kg, 1×10 kg, and 20, 30 or 40 lb cartons. Inner liner and carton strength are matched to the loading plan.
10. Can you produce retail private-label bags?
Yes. We review 300–1,000 g bag size, film, artwork, barcode, label language, cooking statement, carton marks and case count.
11. What are the MOQ and lead time?
MOQ is 10 MT for standard bulk and 15 MT for new printed film. Lead time is 20–25 days for standard packing and 30–40 days for a first printed-pack order.
12. Can frozen bamboo shoots be mixed with other products?
Yes. A mixed load normally starts at 3–5 MT per SKU and must use compatible frozen storage, carton dimensions and destination documents.
13. How long is the frozen shelf life?
Shelf life is 24 months from production when continuously stored at −18°C or below without thawing and refreezing.
14. Which export documents can accompany the shipment?
We prepare the specification, COA, packing list and commercial invoice, and coordinate origin, health, phytosanitary and test documents where applicable.
15. What should be included in a bamboo shoot RFQ?
Send the cut and dimensions, grade, HCN program, packing, quantity, application, destination port, private-label needs and required certificates or reports.
