How We Prepare IQF Frozen Cut Onions

  1. Raw material selection: We receive sound, mature bulbs and remove decay, mold, severe bruising, sprouts and abnormal material.
  2. Peeling and trimming: We remove dry skin, neck, root plate and visibly defective tissue to the agreed standard.
  3. Washing: We wash the peeled onions and manage clean handling before cutting.
  4. Cutting and grading: We set the cutting equipment for the named dice, slice or strip dimensions and inspect size distribution.
  5. Pretreatment: Raw IQF is the default only when named; blanching is applied when the approved product specification requires it.
  6. Draining and IQF freezing: We control surface water and freeze pieces individually to maintain a free-flowing condition.

Color, Texture and Flavor Control

Onion crop, variety, maturity and storage history change the finished ingredient. We therefore separate visual defects from flavor-related parameters. Color inspection covers pale, grey, deep-green, oxidized or abnormal pieces. Character inspection covers tough, fibrous, soft or spongy material.

Soluble solids expressed as °Brix provide a practical crop and sweetness indicator. Pyruvic acid, reported in µmol/g fresh weight under a named method, provides a pungency reference. These are not fixed universal quality scores: the suitable range depends on whether the onion is intended for a mild sauce, a visible savory topping, a cooked filling or a strong onion base.

For projects where water release affects a filling, sauce viscosity or frozen meal, we can add a defined thaw or cook test. The test method must name sample weight, time, temperature and result calculation so repeat batches are compared on the same basis.

Cold Chain and Shipment Planning

We keep finished cartons in frozen storage at −18°C or below and plan reefer loading around the confirmed packing and pallet configuration. Before shipment, the team reviews carton condition, lot marks, quantity, frozen product condition, container status and the temperature requirement stated in the shipping instruction.

The loading quantity is a planning reference, not a guaranteed payload. A floor-loaded 10 kg carton plan can use container space differently from retail packs or palletized cargo. We calculate the final carton count after bag size, carton dimensions, pallet need, container type and local payload restrictions are known.

Repeated thawing and refreezing can increase clumping, ice formation and texture loss. We therefore align production release, cold-store transfer, container booking and loading window to maintain a continuous frozen chain.
