Brix and Pyruvic Acid Are Different Flavor Indicators

Brix measures soluble solids in onion juice and is not a direct sugar assay when other dissolved solids are present. Processing onions often fall around 7–11°Bx, but crop, variety and growing conditions change the result. We state the method, sample condition and batch value when Brix is contracted.

Pyruvic acid is used as an onion pungency index. A practical fresh-weight guide is 1–4 μmol/g for very mild onions, 5–7 for mild, 8–10 for intermediate, 11–15 for pungent and above 15 for very pungent. We use this as a sourcing and sample-matching tool, not as a universal fixed value for every frozen-onion order.

1. Raw Bulb Inspection

We inspect mature onions for decay, sprouts, mechanical damage, watery or translucent scales, soil and abnormal odor. Onion type and crop lot are recorded before processing.

2. Peeling and Trimming

3. Washing and Slicing

4. IQF Freezing

Physical Defect Definitions and Sampling

A numeric tolerance is only useful when the defect definition, sample state and sample weight are included. We inspect free flow and overall appearance while frozen, then evaluate brightness and texture promptly after thawing. Delayed thawed inspection can create oxidation that was not present in the frozen lot.

Blemish

A major blemish uses a 6 mm equivalent-circle threshold. Minor blemishes are defined below the major threshold but above the agreed ignore size. Pathological, insect and dark discoloration damage are counted.

Core, Peel and Root

Core material includes tough or discolored center tissue, sprouts, seed stems, root crown and roots. Peel is the tough outer skin. We define area or piece equivalents before counting.

Appearance and Character

Good appearance combines free flow, brightness and reasonably uniform cut. Good character means uniformly firm and tender onion tissue that is practically free from soft, spongy, tough or mushy pieces.
