Residual dark peel
Method D01-01 · proposed order procedure · reviewed 17 October 2026
Definition: Adherent residual dark outer peel on a peeled corm surface; loose peel flakes are foreign vegetable material and recorded separately. Internal dark flesh is D01-02, not this numerator.
Sample state: Frozen under diffuse light; if frost obscures peel, use one agreed controlled thaw/drain protocol for supplier and buyer.
Sampling and quantity: Apply signed P1 five-unit finished-pack plan; record dice, slices and whole corm as separate SKUs and take peel/internal-tissue portions from the same traceable units.
Inspection procedure: Spread pieces in one layer; turn each piece; use a scale photo and signed minimum visible-area reference to mark peel-bearing pieces. Collect loose peel separately without double counting.
Calculation and reporting: Count every eligible piece once, including peel-bearing pieces: residual-peel incidence = peel-bearing piece count / all eligible inspected piece count x100%. Record minimum eligible size and fines separately. Report peel-bearing whole-piece mass / examined food mass x100% and removed adherent peel mass / original examined food mass x100% as different diagnostics. Keep numerator and denominator in the same frozen or thaw/drain state; never dry only the peel. Report five position results and the pooled same-basis ratio. A buyer-supplied percentage has no acceptance meaning until its denominator and comparison rule are signed.
Product control response: Adjust peeling and secondary visual sorting; segregate suspect run and trace cutter/peeler settings.
Records: Lot, pack locations, inspected piece count and mass, peel-piece count, loose-peel mass, reference photos both sides, sample state, signed spec revision. Retain the mass of peel-bearing pieces and removed peel separately, plus the eligible-piece definition and fines mass.
Hold and release: Apply the signed count or mass rule only to its named result. Processor QC holds affected output if the criterion is exceeded, peel cannot be distinguished from dark flesh, or the inspection basis differs. Investigate peeling, trim and sorter performance; retain the initial result, document permitted rework and draw a fresh agreed sample. The processor quality manager and GreenLand follow the release responsibilities on the common plan.
Source applicability: Proposed GreenLand contract method. The linked product guide provides supplier context, not an independently established legal peel or quality threshold.
Internal and surface discoloration
Method D01-02 · proposed order procedure · reviewed 17 October 2026
Definition: Three mutually exclusive dark findings: attached peel; superficial discoloration without peel; internal abnormal dark tissue on cut-through. Unknown origin remains unclassified pending review.
Sample state: Photograph frozen exterior, then use an agreed hygienic thaw/cut procedure for suspect pieces; never infer internal condition from exterior alone.
Sampling and quantity: Apply signed P1 five-unit finished-pack plan; record dice, slices and whole corm as separate SKUs and take peel/internal-tissue portions from the same traceable units.
Inspection procedure: Separate peel and loose matter; photograph both faces; bisect every suspect and a pre-agreed control subset; record whether dark material follows skin, lies on cut surface or extends into flesh.
Calculation and reporting: Surface-category incidence = affected count / all eligible surface-screened count x100%. Before judging appearance, randomly preselect 20 pieces from each P1 position (all if fewer than 20) for cut-through inspection. Internal-darkness incidence = abnormal random-control pieces / all cut random-control pieces x100%. Cut every additional external suspect for investigation but report that suspect-only stratum separately. Do not pool it into an unbiased incidence estimate; retain five separate counts and the pooled random-control ratio.
Product control response: Check peeling, cutting exposure, raw-material sorting and hold/trace suspected tissue abnormality; do not relabel it as cosmetic peel.
Records: Paired exterior/interior photos with ruler, cut map, category tally, inspector decision and retained pieces.
Hold and release: Release only against separate signed category criteria; unknown or suspected spoilage goes on hold for qualified safety review.
Source applicability: Proposed GreenLand contract method. The linked product guide provides supplier context, not an independently established legal peel or quality threshold.
Dice dimensions and broken pieces
Method D01-03 · proposed order procedure · reviewed 17 October 2026
Definition: Off-size dice, collapsed corners and detached chips are separate forms; a long sliver cannot pass merely because one edge matches nominal size.
Sample state: Firm frozen pieces after breaking only natural loose clusters; no forceful separation that creates new chips.
Sampling and quantity: Apply signed P1 five-unit finished-pack plan; record dice, slices and whole corm as separate SKUs and take peel/internal-tissue portions from the same traceable units.
Inspection procedure: Caliper three orthogonal edges on intact dice; classify off-shape and chipped units with signed photos; sieve/weigh detached fines using buyer-agreed aperture.
Calculation and reporting: Record each intact dice three edge dimensions in mm and signed nominal band. Off-size intact dice / all intact measured dice × 100%; chipped/broken countable dice / all countable dice × 100%; detached fines g / total examined frozen net product g × 100%. Five unit results and pooled counts/masses; no mean of percentages.
Product control response: Set cutter blade/feeding conditions, inspect knife wear and manage conveyance impact.
Records: Three-edge readings, sieve aperture, count and weights, signed target band, equipment adjustment log.
Hold and release: Hold or regrade when signed size/fines band fails; never substitute a nominal cut setting for finished-piece data.
Source applicability: Proposed GreenLand contract method. The linked product guide provides supplier context, not an independently established legal peel or quality threshold.
Crispness after safe preparation
Method D01-04 · proposed order procedure · reviewed 17 October 2026
Definition: Cooked crisp bite and usable intact-piece yield under the customer application; raw hardness alone is not the endpoint.
Sample state: Same frozen lot split into matched portions, prepared only under documented product-specific, safety-approved cooking conditions.
Sampling and quantity: Apply signed P1 five-unit finished-pack plan; record dice, slices and whole corm as separate SKUs and take peel/internal-tissue portions from the same traceable units.
Inspection procedure: Before thaw/cook assign a fixed mass or fixed count from each of five units to the buyer-approved cooking method; record equipment, load, water/oil amount, target product-core endpoint, elapsed time, drain/rest and probe geometry or anchored blinded reference score. Compare a contemporaneous signed reference lot under identical conditions. Do not taste before the validated safe endpoint.
Calculation and reporting: For each unit record force N or coded sensory score with protocol version; cooked intact count / input intact count × 100% and cooked drained net g / frozen input net g × 100%. Report both and the five results; do not claim a universal crispness pass value.
Product control response: Review raw maturity, trim, freezing and handling jointly; compare changes with a control lot.
Records: Cooking validation reference, time/temperature trace, panel/probe calibration, coded scores and before/after counts.
Hold and release: Release on signed application trial and safety status; no universal crispness number or cook time is asserted.
Source applicability: Proposed GreenLand contract method. The linked product guide provides supplier context, not an independently established legal peel or quality threshold.
Trimming yield
Method D01-05 · proposed order procedure · reviewed 17 October 2026
Definition: Trim loss from peeling to accepted dice, distinct from later packing loss or glaze.
Sample state: Weigh identified raw corm input, then peeled/trimmed output and finished accepted dice from one traceable trial batch.
Sampling and quantity: Separate process audit: select three identified production batches covering start/middle/end where records are available; record raw input, peeled output, accepted dice, peel, trim, off-size, rework, water uptake/loss and inventory changes with calibrated/tared scales. P1 five finished packs do not supply raw-input denominator.
Inspection procedure: Tare bins; segregate peel, black-peel rework and sound edible trim; reconcile input, output and rejects before/after a peeling adjustment.
Calculation and reporting: Peeled yield = accepted peeled mass / raw corm mass × 100%; accepted-finished yield = accepted dice mass / raw corm mass × 100%; extra-trim loss = rework-trim mass / incoming peeled mass × 100%. Reconcile all streams in kg on the same wet/frozen state and note water/glaze; report per-batch results, never average batch percentages without mass weighting.
Product control response: Tune peeler depth and hand trim against D01-01 incidence; avoid hiding peel with over-trimming.
Records: Scale calibration, mass-balance sheet, defect tally, batch identity and adjustment record.
Hold and release: No lot release solely by yield; resolve peel quality and unexplained mass discrepancy before commercial approval.
Source applicability: Proposed GreenLand contract method. The linked product guide provides supplier context, not an independently established legal peel or quality threshold.

Cut-surface colour
Method D02-01 · proposed order procedure · reviewed 17 October 2026
Definition: Cut-face color at a named process/arrival stage; enzymatic or storage browning must be separated from natural cultivar color.
Sample state: Matched fresh-cut, post-treatment, post-freeze and arrival frozen/thawed aliquots; use identical thaw/exposure conditions for comparisons.
Sampling and quantity: Apply signed P1 five-unit plan for finished product. Collect separate paired, time-stamped process samples for process-stage comparisons; label them separately from finished-pack units.
Inspection procedure: At fixed elapsed times place slices under controlled lighting, photograph with color reference, and measure L*a*b* on the same anatomical cut-face position.
Calculation and reporting: Report L*, a*, b* with illuminant/observer, instrument geometry, calibration, frost/thaw state, cut-face site and exposure time. If signed, calculate ΔE*ab = sqrt[(L*-Lref*)²+(a*-aref*)²+(b*-bref*)²] against the same-stage reference; state if a different ΔE formula is chosen. Count visually discolored slices / all eligible slices within each P1 five-position finished sample; report process paired samples separately.
Product control response: Review cut-to-treatment delay, water quality/approved anti-browning step and pack oxygen; retain process-stage split.
Records: Timestamped stage photos, instrument calibration, raw-material variety, temperature and slice-position log.
Hold and release: Hold only against agreed stage-specific color band; investigate arrival change before assigning factory fault.
Source applicability: GreenLand proposed contract inspection method. No external numerical crop standard is cited for this lotus root measure; the signed order definition and P1 pilot control the calculation and disposition.
Source status: GreenLand proposed contract method; no external numerical product standard is cited.
Cleanliness inside holes
Method D02-02 · proposed order procedure · reviewed 17 October 2026
Definition: Sand or foreign matter inside natural lotus-root holes is separate from the normal cavity pattern and from discolored tissue.
Sample state: Frozen exterior view followed by hygienic thaw and cut/flush inspection; do not treat a dark cavity shadow as dirt.
Sampling and quantity: Apply signed P1 five-unit plan for finished product. Collect separate paired, time-stamped process samples for process-stage comparisons; label them separately from finished-pack units.
Inspection procedure: Inspect every visible cavity in a defined slice set under directed light; split suspect cavities. Rinse in measured clean water through a preweighed filter, run an equipment/water blank, dry/condition filter by signed protocol and identify mineral/foreign particles before calling them dirt. Photograph source cavity and recovered material.
Calculation and reporting: Confirmed contaminated slices / all examined slices × 100% by five units and pooled counts. Confirmed foreign dry mass minus blank (mg) / frozen net examined mass (kg) = mg/kg; below quantitation limit or unidentified particles are reported explicitly, not zero.
Product control response: Improve field wash, cavity flushing, sorting and rinse-water filtration; isolate lots with true foreign matter.
Records: Cavity photos before/after splitting, filtered residues, rinse condition, affected slice count and lot trace.
Hold and release: Foreign matter or unknown residue triggers hold and identification; natural holes alone are not defects.
Source applicability: GreenLand proposed contract inspection method. No external numerical crop standard is cited for this lotus root measure; the signed order definition and P1 pilot control the calculation and disposition.
Source status: GreenLand proposed contract method; no external numerical product standard is cited.
Fibre and maturity
Method D02-03 · proposed order procedure · reviewed 17 October 2026
Definition: Excessive stringing/woody vascular tissue in cooked lotus-root slices, separate from normal crispness.
Sample state: Cooked only after the approved lotus-root product process and buyer use conditions; paired frozen slice retained.
Sampling and quantity: Apply signed P1 five-unit plan for finished product. Collect separate paired, time-stamped process samples for process-stage comparisons; label them separately from finished-pack units.
Inspection procedure: Randomly preassign an equal count of slices from each frozen unit; use the approved cooking load/time/core endpoint, drain interval and serving temperature. Cut/bend along a recorded radial orientation; compare coded pieces with signed acceptable reference and record shear blade/speed if instrumented.
Calculation and reporting: Stringy cooked slices / all cooked evaluated slices × 100% for each unit and pooled count. Report shear force N distribution, blade geometry, orientation and serving temperature separately; no universal maturity threshold.
Product control response: Review raw maturity, segment selection and trim position; sort suspect roots before slicing.
Records: Harvest/segment identity, coded cooked images, process trace, force settings and panel notes.
Hold and release: Hold or redirect on agreed application score; do not call mere crispness a maturity failure.
Source applicability: GreenLand proposed contract inspection method. No external numerical crop standard is cited for this lotus root measure; the signed order definition and P1 pilot control the calculation and disposition.
Source status: GreenLand proposed contract method; no external numerical product standard is cited.
Slice thickness distribution
Method D02-04 · proposed order procedure · reviewed 17 October 2026
Definition: Slice thickness is the distance between two cut faces; oblique slices require a defined normal-to-face measurement, not longest edge.
Sample state: Firm frozen slices with frost removed non-destructively.
Sampling and quantity: Apply signed P1 five-unit plan for finished product. Collect separate paired, time-stamped process samples for process-stage comparisons; label them separately from finished-pack units.
Inspection procedure: Measure thickness normal to the two cut faces at the geometric center of each intact frozen slice with a calibrated caliper; record maximum sound-zone thickness separately and flag oblique faces. Do not use damaged edges.
Calculation and reporting: Contract size decision uses center thickness in mm unless buyer signs maximum-thickness basis. Out-of-band intact slices / all intact measured slices × 100%; report per-unit and pooled counts plus center and maximum distributions.
Product control response: Adjust slicer blade spacing and feed alignment; inspect blade wear.
Records: Per-slice measurements, caliper calibration, orientation photos and machine settings.
Hold and release: Hold/regrade only against signed thickness band and intended cooking-time requirement.
Source applicability: GreenLand proposed contract inspection method. No external numerical crop standard is cited for this lotus root measure; the signed order definition and P1 pilot control the calculation and disposition.
Source status: GreenLand proposed contract method; no external numerical product standard is cited.
Intact slice proportion
Method D02-05 · proposed order procedure · reviewed 17 October 2026
Definition: Broken slice means loss of the signed minimum ring/segment continuity; evaluate breakage at frozen, standardized thaw and cooked stages separately.
Sample state: Identify the same countable slices in each P1 five-position subsample before frozen handling, then follow each through controlled thaw and approved cooking/transfer; if matched tracking is impossible, use separate randomized splits but report only stage-specific prevalence, not incremental breakage.
Sampling and quantity: Apply signed P1 five-unit plan for finished product. Collect separate paired, time-stamped process samples for process-stage comparisons; label them separately from finished-pack units.
Inspection procedure: Count complete and fractured slices before handling; apply identical thaw/cook/transfer; count new fractures, retaining pre-existing cracks separately.
Calculation and reporting: For matched pieces: new fracture rate at stage = pieces first fractured at that stage / same pieces intact immediately before that stage × 100%; cumulative broken prevalence = broken identified pieces at stage / original identified pieces × 100%. Report five unit numerators/denominators and pooled ratios. For independent splits, report separate stage proportions without subtraction.
Product control response: Review cut thickness, freezing, packing compression and thaw/cook handling.
Records: Paired stage photos, counts, pack position, thaw/cook conditions and transport observations.
Hold and release: Use stage-specific signed limits; never charge supplier for fractures created by an unagreed destructive test.
Source applicability: GreenLand proposed contract inspection method. No external numerical crop standard is cited for this lotus root measure; the signed order definition and P1 pilot control the calculation and disposition.
Source status: GreenLand proposed contract method; no external numerical product standard is cited.

Residual peel and root hairs
Method D03-01 · proposed order procedure · reviewed 17 October 2026
Definition: Adherent taro peel and root hairs on peeled dice are separate from natural edible flesh pattern; count loose fibers separately.
Sample state: Frozen exterior inspection; do not taste raw taro.
Sampling and quantity: Apply signed P1 five-unit plan; keep taro cultivar, cut size and process run separate. Preassign one split per unit for safely cooked texture, after frozen defect count.
Inspection procedure: Turn each dice; use scale photo to classify retained peel, root hair and normal varietal marking; collect detached hairs/fibers.
Calculation and reporting: Attached-peel dice / all eligible inspected dice × 100% and attached-root-hair dice / all eligible inspected dice × 100% (overlap flagged); detached hair/peel mass g / total frozen net product g × 100% separately. Record each of five units and pooled counts/masses.
Product control response: Improve peeling and root-hair removal; add dedicated sort of irregular corm ends.
Records: Taxonomy images, counts, material mass, peeler setting and lot identity.
Hold and release: Hold when signed cosmetic or foreign-material rule fails; unknown tissue material needs identification.
Source applicability: GreenLand proposed contract method. The taro technical review supports the need for safe cooking, not a defect rate, numerical acceptance limit or validated GreenLand cooking process.
Natural pattern and discoloration
Method D03-02 · proposed order procedure · reviewed 17 October 2026
Definition: Normal taro cultivar marbling versus abnormal spots/decay must be judged on both cut face and exterior using cultivar-specific reference.
Sample state: Frozen exterior and hygienically cut/thawed cross-section; no raw tasting.
Sampling and quantity: Apply signed P1 five-unit plan; keep taro cultivar, cut size and process run separate. Preassign one split per unit for safely cooked texture, after frozen defect count.
Inspection procedure: Photograph representative accepted cultivar pattern; compare suspect color under fixed lighting and cut through stained pieces for depth and softness.
Calculation and reporting: Abnormally marked frozen dice / all eligible frozen-screened dice × 100%; soft/suspect decay dice / all frozen-screened dice × 100%. Cut every suspect plus a preselected random control subset per unit; report internal findings in suspect and control strata separately. Match cultivar reference; unknown lesion remains unresolved and on QA hold.
Product control response: Segregate varieties and raw-material lots; review trim and storage history.
Records: Approved cultivar reference board, cross-section photos, lot/variety code and inspector adjudication.
Hold and release: Suspect spoilage holds the lot for safety review; natural marbling passes if it matches signed reference.
Source applicability: GreenLand proposed contract method. The taro technical review supports the need for safe cooking, not a defect rate, numerical acceptance limit or validated GreenLand cooking process.
Broken corners
Method D03-03 · proposed order procedure · reviewed 17 October 2026
Definition: Taro chips/fines detached from dice are distinct from a dice with one missing corner.
Sample state: Frozen free-flow pieces before thaw; do not force apart frozen clumps.
Sampling and quantity: Apply signed P1 five-unit plan; keep taro cultivar, cut size and process run separate. Preassign one split per unit for safely cooked texture, after frozen defect count.
Inspection procedure: Classify intact, corner-missing and detached fines; sieve gently using agreed aperture and weigh the fines separately.
Calculation and reporting: Corner-missing countable dice / all countable dice (sound + corner-missing + other broken) × 100%; classify other broken units separately. Detached fines mass g / actual examined frozen food mass g × 100%. Report five unit ratios and pooled numerator/denominator; never exclude damaged dice from the count denominator.
Product control response: Check knife sharpness, blanching/handling damage if used, and pack impact.
Records: Signed shape reference, sieve aperture, counts, weights and cutter/packing record.
Hold and release: Regrade or hold against contract bands; report both metrics so fines do not vanish from denominator.
Source applicability: GreenLand proposed contract method. The taro technical review supports the need for safe cooking, not a defect rate, numerical acceptance limit or validated GreenLand cooking process.
Texture after safe preparation
Method D03-04 · proposed order procedure · reviewed 17 October 2026
Definition: After approved full cooking, distinguish desirable mealy-soft taro from hard core and disintegrated paste; raw firmness is not a safety or taste test.
Sample state: Use frozen split sample only after product-specific cooking process has been validated for taro corm safety; never taste raw or merely blanched samples.
Sampling and quantity: Apply signed P1 five-unit plan; keep taro cultivar, cut size and process run separate. Preassign one split per unit for safely cooked texture, after frozen defect count.
Inspection procedure: QA first confirms documented product-specific taro safety cooking protocol and ordinary lot safety release. Preassign a frozen count/mass portion from each of five units; record core temperature/time endpoint, hold, drain and serving interval, then blind-score hard cores against signed reference. No raw or merely blanched tasting.
Calculation and reporting: Hard-core cooked dice / all cooked evaluated dice × 100%. Collapse yield = detached/collapsed drained mass g / frozen input mass g × 100% (state if buyer signs a different basis); cooked drained output / frozen input g/g separately. Retain five unit counts and masses.
Product control response: Review variety/maturity, dice size, process adequacy and freezer handling; never fix a hard-core complaint by unsafe undercooking.
Records: Safety-approved protocol, time/core-temperature trace, size distribution, coded panel and collapse weights.
Hold and release: Do not authorize sensory release until approved safe cooking and ordinary lot safety release; application limits require buyer sign-off.
Source applicability: GreenLand proposed contract method. The taro technical review supports the need for safe cooking, not a defect rate, numerical acceptance limit or validated GreenLand cooking process.
Trimming yield
Method D03-05 · proposed order procedure · reviewed 17 October 2026
Definition: Usable taro dice yield after peeling, root-hair removal, trimming and shape grading.
Sample state: Traceable raw-corm input and accepted frozen dice, with each loss stream weighed separately.
Sampling and quantity: Separate traceable process mass-balance trial on three identified raw-corm batches; weigh raw input, peeled output, accepted frozen dice, peel/root-hair trim, edible trim, off-size/rework and inventory/water changes. P1 five-pack finished inspection does not measure raw-to-finished yield.
Inspection procedure: Weigh raw input, peel/hairs, trimmed edible material, off-size and final accepted dice using tared bins; reconcile water addition/loss separately.
Calculation and reporting: Accepted frozen dice kg / raw corm kg × 100%; each weighed loss stream kg / raw corm kg × 100%; report each batch, total kg reconciliation and weighted aggregate mass ratio. Show water uptake/loss or glaze separately; unexplained imbalance is not a product safety verdict.
Product control response: Adjust raw size procurement and peeler depth; investigate unexpected loss without relaxing safety trimming.
Records: Mass-balance sheet, scales, raw grade, trim photos and batch identity.
Hold and release: Yield is costing evidence, not a standalone safety release criterion; unexplained imbalance holds accounting/reconciliation.
Source applicability: GreenLand proposed contract method. The taro technical review supports the need for safe cooking, not a defect rate, numerical acceptance limit or validated GreenLand cooking process.

Woody fibre
Method D04-01 · proposed order procedure · reviewed 17 October 2026
Definition: Coarse woody base or outer sheath fiber that remains hard/stringy after safe preparation; normal tender shoot fiber is excluded.
Sample state: Segment origin identified on frozen pieces; cooked evaluation only after product-specific safe bamboo-shoot preparation is validated.
Sampling and quantity: Apply signed P1 five-unit plan; keep species, process status, cut form and known tip/middle/base stratum separate. Record unknown origin and preassign cooked-use splits only after safety-protocol approval.
Inspection procedure: Mark tip/middle/base; cut across fibers; after validated processing, score chew resistance or instrumental shear against signed reference.
Calculation and reporting: For each anatomically confirmed section, woody cooked pieces / all cooked tested pieces from that section × 100%; report unknown-origin pieces separately. If shear is used, record N, blade orientation, speed, serving temperature and signed comparator. Do not pool section rates into a claimed universal bamboo-shoot grade.
Product control response: Trim basal and outer sheath tissue; segregate raw shoot maturity and section.
Records: Segment map, cut/cooked photos, approved safety-process trace and coded texture scores.
Hold and release: Hold application release if safe-processing status is unproven or agreed woody fraction fails.
Source applicability: GreenLand proposed contract method. FSANZ supports the bamboo-shoot cyanogenic-glycoside hazard and preparation caution, not a product-specific validated process, defect rate or numerical acceptance limit.
Sources: BAMBOO-FSANZ: FSANZ bamboo-shoot safety guidance; raw shoots contain cyanogenic glycosides
Tip, middle and base portions
Method D04-02 · proposed order procedure · reviewed 17 October 2026
Definition: Tip, middle and base are anatomical sections with different cut and texture behavior; label section mix rather than treating all color variation as defect.
Sample state: Frozen slice/dice section visible where possible; retain raw-section mapping for ambiguous cuts.
Sampling and quantity: Apply signed P1 five-unit plan; keep species, process status, cut form and known tip/middle/base stratum separate. Record unknown origin and preassign cooked-use splits only after safety-protocol approval.
Inspection procedure: Classify by documented production section mapping and morphology; weigh each section; perform matched approved cooked-use trial if buyer needs texture choice.
Calculation and reporting: Tip, middle, base and unclassified section mass (g) / total examined frozen net mass (g) × 100% separately; categories must sum to 100% within rounding. Identify section using production mapping where possible; an unknown section is not silently redistributed.
Product control response: Control section segregation and blending at cutting/packing.
Records: Raw-section photos, traceable bins, weighed mix and buyer reference set.
Hold and release: Release against signed section mix for application; no assumed universal tip/base ratio.
Source applicability: GreenLand proposed contract method. FSANZ supports the bamboo-shoot cyanogenic-glycoside hazard and preparation caution, not a product-specific validated process, defect rate or numerical acceptance limit.
Sources: BAMBOO-FSANZ: FSANZ bamboo-shoot safety guidance; raw shoots contain cyanogenic glycosides
Spots and trimming
Method D04-03 · proposed order procedure · reviewed 17 October 2026
Definition: Natural cream/yellow bamboo-shoot tone, exposed-cut browning and localized pathological stain are separate categories.
Sample state: Frozen exterior plus standard controlled thaw and split of suspect pieces; no raw tasting.
Sampling and quantity: Apply signed P1 five-unit plan; keep species, process status, cut form and known tip/middle/base stratum separate. Record unknown origin and preassign cooked-use splits only after safety-protocol approval.
Inspection procedure: Photograph cut face on neutral card at fixed interval; separate diffuse browning from penetrating/soft spots and compare signed natural-color sample.
Calculation and reporting: Record mutually exclusive normal, superficial browning, penetrative discoloration and unresolved units; each count / all examined countable pieces × 100%. Also record soft/decay-suspect units (may overlap) and hold them for qualified QA review. Optional L*a*b* is descriptive with fixed cut-face timing, not a safety decision.
Product control response: Control cut-to-treatment delay and trim suspect raw tissue; investigate treatment deviations.
Records: Timed photos with scale/color card, section origin, cross-section and treatment record.
Hold and release: Hold penetrating/soft/unknown tissue for safety review; cosmetic color judged by signed application sample.
Source applicability: GreenLand proposed contract method. FSANZ supports the bamboo-shoot cyanogenic-glycoside hazard and preparation caution, not a product-specific validated process, defect rate or numerical acceptance limit.
Sources: BAMBOO-FSANZ: FSANZ bamboo-shoot safety guidance; raw shoots contain cyanogenic glycosides
Cut consistency
Method D04-04 · proposed order procedure · reviewed 17 October 2026
Definition: Slice thickness or dice edge and fiber direction are separate attributes; a long basal fiber may survive a nominally correct cut.
Sample state: Firm frozen piece, identified section and cutting orientation.
Sampling and quantity: Apply signed P1 five-unit plan; keep species, process status, cut form and known tip/middle/base stratum separate. Record unknown origin and preassign cooked-use splits only after safety-protocol approval.
Inspection procedure: Declare slices or dice before inspection. Measure slice thickness normal to cut faces or three dice edges on intact frozen units; on preselected units identify anatomical fibre direction from the production section and photograph whether the long fibre aligns with the longest piece dimension. Unknown origin/orientation remains unclassified.
Calculation and reporting: Off-band intact units / all intact measured units × 100%; fibre-aligned units / all orientation-classifiable inspected units × 100%; record unclassifiable count separately and report five-unit pooled ratios.
Product control response: Tune blade spacing and feed orientation; route woody bases to another cut/trim.
Records: Caliper readings, orientation/section photos and cutter setting.
Hold and release: Hold/regrade against signed size and orientation requirements; neither replaces cooked fiber result.
Source applicability: GreenLand proposed contract method. FSANZ supports the bamboo-shoot cyanogenic-glycoside hazard and preparation caution, not a product-specific validated process, defect rate or numerical acceptance limit.
Sources: BAMBOO-FSANZ: FSANZ bamboo-shoot safety guidance; raw shoots contain cyanogenic glycosides
Texture after safe preparation
Method D04-05 · proposed order procedure · reviewed 17 October 2026
Definition: Crisp/tender versus rubbery/hard mouthfeel and usable intact yield after safe bamboo-shoot processing; these are application outcomes.
Sample state: Frozen split lots prepared by a product-specific validated cyanogenic-glycoside control process and then buyer application; do not taste unprocessed or inadequately processed shoots.
Sampling and quantity: Apply signed P1 five-unit plan; keep species, process status, cut form and known tip/middle/base stratum separate. Record unknown origin and preassign cooked-use splits only after safety-protocol approval.
Inspection procedure: Processor QA identifies species, shoot age/form, pretreatment, water discard/replacement and full cook/processing protocol; documents validation and routine verification appropriate to the product and intended use before any tasting. Only after safety release, run equal frozen portions from five units through the signed buyer application and coded texture/intact-yield trial.
Calculation and reporting: Coded sensory score or shear N with geometry; usable cooked pieces / input pieces × 100%, cooked mass yield g/g reported separately.
Product control response: Review raw species/age, basal trim and the validated process; do not shorten safety treatment to preserve crispness.
Records: Safety validation and lot execution records, preparation conditions, panel coding and weights.
Hold and release: Processor QA places product on hold if species/process safety validation or batch verification is absent, failed or ambiguous; no sensory test substitutes for this decision. After documented safety release, buyer and QA apply signed texture/intact-yield limits and authorize release, rework or rejection with fresh P1 reinspection as agreed.
Source applicability: GreenLand proposed contract method. FSANZ supports the bamboo-shoot cyanogenic-glycoside hazard and preparation caution, not a product-specific validated process, defect rate or numerical acceptance limit.
Sources: BAMBOO-FSANZ: FSANZ bamboo-shoot safety guidance; raw shoots contain cyanogenic glycosides
