Application Matching Without Changing the Product Definition
The same nominal cut can behave differently in a high-volume fryer, a convection oven and an air-fry retail instruction. We therefore ask how the product will be finished, how long it must be held and how the portion is served. For quick-service frying, the priorities are rapid recovery, uniform color and predictable basket yield. For delivery and takeaway, crispness after a defined hold becomes more important than the immediate fryer result. For a supermarket program, the pack may need both oven and air-fryer directions, but those directions must be developed from the approved product rather than copied from another cut.
Restaurants and catering operations often prefer 9×9 or 10×10 mm straight cuts because they balance cooking time with a recognizable potato center. Steakhouse and pub menus may choose 12×12 or 15×15 mm for a fuller bite, accepting a longer finish time. Shoestring fries suit fast service and crisp presentation but are more sensitive to overcooking and breakage. Seasoned wedges require a separate coating, flavor and allergen specification. Potato cubes belong in a separate program for breakfast service, ready meals or industrial preparation because cube texture, cooking method and defect classification differ from strip-style fries.

Cut Programs for Different Channels
Cross-section determines cooking speed, surface-to-center ratio and the eating profile. Length distribution determines how the portion looks and how efficiently a kitchen fills a basket or carton. Our quotation identifies both. A request for "10 mm fries" is incomplete until the buyer also states the length target, coating status, finish equipment and pack.

Defect Plan: What We Count Instead of Saying "Grade A"
Grade language is useful only when the scoring method is known. USDA frozen French-fried potato standards, for example, evaluate flavor, color, size and symmetry, defects and texture, with Grade A requiring at least 90 points and Grade B at least 80 points. For a commercial export contract, we translate the buyer's acceptance into countable or weighable categories.
- Size and breakage: off-size strips, short pieces, slivers, broken pieces, shattered ends and compact clumps.
- Potato defects: black spots, bruised tissue, green pieces, peel, eyes, hollow center and internal discoloration.
- Process defects: uneven blanching, excessive surface frost, oiliness, dark or burnt pieces, sugar ends and abnormal odor.
- Pack defects: open seals, weak cartons, unreadable date code, incorrect net weight and damaged master cases.
The agreed sampling plan states the sample mass, classification rules and acceptance limit. This prevents a shipment dispute caused by two teams using different definitions for "short," "broken" or "dark."
Processing Flow and Product-Specific Control Points
- Raw potato intake: we review maturity, size, soundness, dry matter and reducing-sugar behavior for the selected fry program.
- Washing, peeling and trimming: soil, peel, eyes, green tissue and damaged areas are removed before cutting.
- Cutting and grading: strips pass through the selected cutting system; off-size and short pieces are separated according to the order specification.
- Rinsing and blanching: surface starch is removed and heat treatment is controlled to support color and internal texture.
- Drying and formula application: surface water is reduced; any dextrose, SAPP, salt or coating follows the declared formula.
- Pre-frying: time, temperature and oil condition are controlled for the target fat level and finish performance.
- Quick freezing: the product is frozen and separated to support free-flowing handling and minimize clumps.
- Final inspection and packing: appearance, size, defects, metal-detection controls, net weight, sealing and coding are reviewed.
- Frozen storage and loading: cartons remain at −18°C or colder and are loaded into a suitable reefer under the shipment plan.

Color comparison before final frying helps identify pale, dark or variable product. The approved test also records color after the standard finish.
Finished-Fry Test and Hold Evaluation
We use a standardized preparation method for quality comparison, not a household recipe. For a 10×10 mm reference sample, the working method is frying directly from frozen at 175°C for approximately 3–4 minutes. The protocol records fryer type, oil, basket load, start temperature and endpoint color because each variable affects the result.
The immediate result covers external crispness, cooked center, potato flavor, greasiness and color uniformity. For delivery, takeaway or buffet programs, we can add a timed hold check at the buyer's nominated interval. A clear-coated format may be requested when longer crispness is needed, but coating composition and allergen status must appear in the formula and label review.
Excessively dark frying is also a process risk. Reducing-sugar control and a golden-yellow endpoint are practical acrylamide mitigation measures. For EU-oriented programs, 500 µg/kg is the benchmark level for ready-to-eat French fries under Regulation (EU) 2017/2158. It is an action benchmark for mitigation review, not an automatic legal maximum and not a batch result pre-filled on this page.

Microbiological, Chemical and COA Baseline
A specification limit states what the lot must meet. The COA "Actual Result" column states what the laboratory or plant test measured for that production batch. We keep these two columns separate. Method, sampling frequency and destination-market requirements are added to the signed specification.

Cold-Chain Release and Loading
Frozen quality can be damaged after production if cartons wait in a warm area or the reefer is unsuitable. Before loading, we check product release status, carton quantity and marks, container cleanliness, odor, visible damage and set-point requirement. We arrange loading to limit unnecessary exposure and keep the shipment plan aligned with the bill of lading and packing list.
The storage requirement is −18°C or colder. The container set point, ventilation setting, pallet arrangement and data-logger requirement are written into the shipment instruction where applicable. A temperature record shows the shipment condition; it does not replace product release testing.
Upon receipt, the buyer should inspect seal number, carton condition, product temperature and any signs of thaw-refreeze before moving the goods into frozen storage. Claims handling is faster when photos, logger data and receiving records are retained.
